Is Boxed Wine the Next Hipster Fad?

2013_02_23-boxedwinefinal.jpgI have only negative memories of boxed wine: from college basement parties to my grandmother's tennis friends in Arizona, it never held my interest. But things are changing and boxed wine is not only becoming cooler, it's simply starting to make more sense.

At neighborhood bars around Seattle, it seems distilleries and breweries are opening each weekend. There is an almost palpable start-up energy with craft bars and interesting small-batch beers, our friends are making their own Fernet Branca, and cocktail house parties have become a favorite pastime. Beyond Seattle, a lot of this energy certainly focuses in on crafting new food and beverage products as well. You can see this parodied in episodes of Portlandia or Girls, or see the evidence in small artisan bottles of catsup or specialty salts at your local boutique grocer.

Trailing not-that-far behind those catsup and salt artisans are the renegade wine makers, and these days it seems some of that buzz is in boxed wine, that product with a long-held reputation for cheap Merlot or rowdy late night parties.

Steffan Bankier, founder of start-up Public House, a New York-based boxed wine company says of his product, "The box holds four bottles of wine ... it's recyclable and the bag keeps the wine fresh for 4-6 weeks once you open it. When you open a bottle, you've got 3-4 days max." Some boxed wine makers have been at it for years and others, like Bankier, are just jumping in now to get their feet wet. Regardless of tenure, all are starting to move boxed wine beyond its ho-hum reputation, relying on the fact that the product just seems to make good sense.

But while it may make sense and businesses like Public House are thinking of new ways to draw customers over to their side, is boxed wine really necessary or it it just another soon-fleeting food/drink trend? From reading and chatting with wine lovers from all walks of life and researching a few boxed wine companies from around the country, it seems there are three main reasons its about to have its time. Or perhaps I'm late to the party, so to speak, and its time is here.

1. Shelf Life: This is a pretty big draw for many folks. Gone are the days of worrying whether or not to open a bottle of red for fear it could go bad before you and your significant other will finish it -- a good box of wine will last for weeks. This is probably the biggest draw of all for me as we have a household of two and there are weeknights where one of us may want just one glass and a bottle ends up sitting for a few too many days before we both sit down to enjoy the rest of it. Why does it last longer? Real Simple writer Jessica Brassard notes, "The bag inside the box slows oxidization because as you use the tap to remove the wine from the bag, the bag collapses and limits the air inside. With a bottle of wine, once it has been opened, the exposure to oxygen means you usually have just a few days before air affects the flavor of the wine."

2. Ease and Convenience: For those of us on the go, boxed wine can be great because you don't have to worry about bottles breaking if you head out on a camping trip, hiking venture or road trip. I'm thinking: just in time for summer picnic season!

3. Savings and Value: Boxed wine is often much more affordable than buying an equal amount of bottled wine. The folks behind Black Box wine note their boxes "costs 40% less than comparable bottled wines."

Regardless of whether boxed wine is the next hipster fling, a wine cousin of PBR, it does seem to be making a strong case for its practical self. (Don't just take my word for it, too; our wine writer Mary Gorman is a fan of some of the newer boxed wines too!)

My Uncool Kitchen Tool: Moms Mixer

When I moved from a college dorm into an apartment, my mother helped me stock my kitchen, allowing me to use precious Greenbax Stamps to purchase a sleek white hand mixer. When she saw it, she asked to trade, offering me her Iona avocado green mixer, a wedding gift from my fathers college friend English McCutchen. The mixer was only 20 years old then, and in fine condition.

My parents were married on June 5th, 1971. It was a beautiful day and the marriage was a good one. They also got some pretty sweet gifts, many of which are still in evidence today, finally cool again, in shades of avocado green, harvest gold, and burnt orange -- including that mixer.

My siblings and I threw a party for our parents on their 40th anniversary. One of their bridesmaids still had her dress from the wedding, a lovely avocado green empire waist gown with a Mandarin collar, which we displayed on a dress form, next to their wedding album and a replica of the bridesmaids bouquets. Almost everyone in the wedding party made it to our celebration and the day was filled with shared laughter and memories. The party was a surprise, though my mother had been given a little notice. She was tired from her cancer treatment and we knew she needed to reserve energy for the big day. A few days before, she sent me to the attic to find her veil, which she wore to the party, with white jeans and a linen tunic.

My mother died just days later, leaving behind years of happiness. The mixer, now more than 40 years old, still runs like a dream. And when it doesnt? Ill get it fixed, because its a piece of my mom and I wont let go.

How Can I Tell If My Dishes Are Too Heavy for My Shelves? Good Questions

Q:I live in a 1950'sranch with knotty pine cabinetry. We just got new dishes and they're much heavier than our old dishes. It got me wondering how much weight can these old cabinets hold? Is there a rule of thumb? The cabinets are one long unit with three shelves and a wooden back.

It's Friday night. The weekend is stretching out before you. Time for pizza and a movie in the comfort of your living room. No need to plan ahead text your best movie-watching amigos with the "when" and "where" details before you leave work on Friday and pick up the ingredients on your way home.

Make It Happen:

Nothing in this menu absolutely hasto be done ahead, even the pizza dough, but if you do find yourself with a free evening, you can prep the salad (it will keep fabulously in the fridge) and make the no-bake nutella cookies (ditto on the refrigeration). You can make the ginger ale syrup to mix with sparkling water later or you can actually go the whole nine-yards and ferment it!

We love our quick-fix pizza dough, linked above, and even picking up dough at the store is fine by us. But Peter Reinhardt's overnight pizza dough also makes a stellar pizza. Here's more about it if you feel so inclined: Peter Reinhardt's Best Pizza Dough Ever.

On to movie night! Step one: Get the oven cranking. It will have time to get nice and toasty as you prep everything else. Get the pizzas and their toppings ready to go next, assembly-line style. While those are baking, you can make the salad, the popcorn, and the cookies (if you haven't already done so).

These recipes also lend themselves to group participation, so get your friends and family members in on the cooking action. It's Friday night, so pour the first round of drinks while you're getting the food together and let the evening roll onwards from there.

5 Unexpected Ways to Use Curry Paste

030213-curry.jpg I've been adding curry paste to an assortment of old standby dishes to give them a bit of kick. If you have half a can of curry paste lying about here are a few unexpected ways to put it to good use!

I've written about my favorite curry paste in the past and it should be noted that I am a huge fan of green over red curry pastes. That's simply a matter of taste, but I have found that I have better luck controlling the heat without many surprises. That said, if you're a fan of red or even panang, then by all means give it a go!

Here's what I've been digging it in:

Chicken Noodle Soup: Add 2 teaspoons for every bowl or a few tablespoons for the whole pot if you're making it from scratch instead of reheating leftovers.

Egg and Tuna Salads: 1 teaspoon to every few sandwiches is a tasty mixture. Add it to your mayo/yogurt/avocado (whatever binder you're using) and then add in your protein!

Roasted Anything: Maybe it's potatoes, maybe it's fresh vegetables. Mix a tablespoon of it into your oil before tossing and roasting. It's a bit of kick without being too spicy.

Meatballs (Or Loaf): Although meatballs and meatloaf are serious comfort food, try giving them a punch with a few tablespoons of curry paste before baking.

Marinades and Rubs: Ok, so it's not a dish in itself, you caught me, but when rubbed on chicken or pork before baking, searing, grilling, anything.... it's the bee's knees. It's just enough of everything without buying expensive premade marinades and rubs from the grocery store.

I've also tried things like adding it to my popcorn oil, mixing it in with granola and nuts and although they were tasty, I have a feeling they were also an acquired taste for most. Do you have a favorite thing to add curry paste to? Share your ideas in the comments below!

Salt Sugar Smoke by Diana Henry New Cookbook

"I am a home cook," writes Diana Henry, and this is the approach she takes in Salt Sugar Smoke. "I have done everything in this book in a gentle way and didn't spend much on new equipment." Yet the results are glorious: sumptuous fruit jams and curds, savory smoked meats and salted fish, and a very international lineup of condiments, syrups, alcohols, and pickles.

Which is not to say it isn't practical; this book is filled with eminently doable recipes for all who want to fill their pantries with the riches of preserved fruit, vegetables, meat, and fish.

The flavors and ingredient combinations here are special and worldly, from purple fig and pomegranate jam to Thai jungle curry paste, Mexican adobo sauce, and Persian pickled cherries with tarragon. Basics are covered, too, like simple homemade bacon and bread and butter pickles. As Henry beautifully describes, preserved foods are "culinary accessories" that a busy cook can use to easily transform a meal, whether it's a simple plate of steamed vegetables, a roasted chicken, or a bowl of morning yogurt.

New cooks will benefit from easy-to-follow recipes and Henry's "how to use" suggestions, while experienced food preservers will find lots of creative ideas. Revised from the original British edition, the US edition has American measurement units and includes USDA-recommended processes for boiling water bath canning.

My Uncool Kitchen Tool: Cheap Aluminum Garlic Press

2013_2_28-uncool-tool-garlic-press-finals-1.jpgBecause I tout the simple, sparse life in the kitchen, it comes to the surprise of many who visit me in my cooking den that I own a garlic press. The love affair didn't happen overnight. It took me a while to proudly press garlic with a one-hit-wonder gadget, but now I use it all the time.

This single-use tool doesn't even have any sneaky alternate uses; the only thing it will do for your meal is crush garlic into the finest, most gloriously minuscule mince possible.

Well, there is one other use for this uncool tool, and it was actually its first use in our house. I bought the garlic press dark sunglasses and wig on when my daughter was a baby, after seeing her play with it at a friend's house, noting how it kept her busy in her high chair for minutes on end while I put together a meal.

Labeled in my mind as a toy, I kept it in a kitchen drawer, determined not to need it as a gadget. But as my daughter found less joy in pushing a banana or play-dough through it, I found gradual doses of joy in the way it minced garlic in one go and soon enough, with pride taking over my shame, I moved it out of the drawer and into my countertop kitchen tool pot.

I actually enjoy scooping out the film of garlic skin left behind after a good pressing and feeling it release with a pop from the perforated basket. It turns black in the dishwasher, so I have to clean it by hand; one might argue the care of it more than makes up for the time and effort saved by using it in the first place, but the tactile thrill of pushing a clove swiftly through its little holes keeps me hooked.
