How To Freeze Cooked Brown Rice Cooking Lessons from The Kitchn

Nutty, nourishing brown rice is a great addition to rice bowls and the perfect accompaniment to stir-fries, but its long cooking time makes it a tough sell for busy weeknight dinners. Packaged, precooked brown rice from the frozen section of the supermarket makes preparation quick and foolproof enough for last-minute meals but why pay extra when it is so simple to freeze your own portioned brown rice at home?

Freezing cooked brown rice flat in freezer bags makes it easy to store. This method also helps the rice reheat quickly straight from the freezer without thawing, which keeps it from becoming mushy. You can even use the frozen rice for fried rice; just add it to the pan frozen and it will quickly warm up.

This technique can be used with other types of rice or whole grains, and is especially useful with long-cooking grains like wheat berries and farro.

How To Freeze Cooked Brown Rice

What You Need

Ingredients
Cooked brown rice

Equipment
Rimmed sheet pan
Wooden spoon
Measuring cup (optional)
Quart-size freezer bags
Gallon-size freezer bag(s)

Instructions

1. Cool the Rice: Run the sheet pan under water and shake out the excess. (The moisture will keep the rice from sticking.) Scoop the rice onto the pan and spread out evenly. Let cool for 10 minutes, or until rice is no longer piping-hot.

2. Portion the Rice: If you want to keep a close eye on portion size, use a measuring cup to divide the rice into the desired serving size. To keep the rice from sticking, wet the cup by filling it with water and pouring it out. Fill the measuring up with rice and transfer to a quart-size freezer bag. Use your hands to spread and flatten the rice, so it forms an even layer in the bag, and seal shut, squeezing out as much air as possible. Repeat with the remaining rice, rewetting the cup if the rice starts to stick to it.

3. Freeze the Rice: Lay the filled freezer bags in flat stacks on a clean sheet pan and place in the freezer for 2 hours, or until the rice is frozen.

4. Pack for Easier Storage: Pack the frozen rice bags into one or more gallon-size freezer bags, labeled with the contents and date. Store in the freezer for up to three months.

5. Reheat the Rice: Transfer the frozen rice to a microwave-safe container, cover and heat in 1-minute increments on full power, until rice is hot. You do not need to thaw the rice before reheating.

Additional Notes:
Other Cooked Grains: This method can be used with other types of rice or other cooked whole grains.

Reuse the Bags: To save money and cut down on waste, wash and reuse the freezer bags after reheating the rice.

For Tomorrow's Lunch: 10 Grain & Legume Basics to Cook Tonight

2010_08_25-Basics.jpgThinking about lunch tomorrow or next week? Wondering what you're going to eat? Here are ten make-ahead grains, legumes, and other basics that can serve as the base for a great lunch. From brown rice to sweet potatoes, think about making one or two tonight to serve as your lunch tomorrow!

Each of these foods is very simple to make the night before, and each lasts well. Most of these are also fairly nutritious, and a lot of them are high in fiber and whole grain yumminess.

So start a batch of one of these before you eat dinner; it often involves nothing more than boiling water.

1. Brown Rice - This is my own personal favorite for lunches. Short-grain brown rice is so nutty and stays so soft and tender, even in the fridge. Warm it up with some sesame oil and almonds delicious!

2. Quinoa - Nutritious and nutty. Top with some shredded chicken or a few tomato slices.

3. Lentils - Lentils make a great base for lunch. I especially like them topped with a poached egg or some bacon.

4. Sweet Potato - Roast a sweet potato and take it to work with some cooked greens and a dollop of yogurt.

5. Beans - Cook a batch of beans tonight and they'll last all week!

6. Butternut Squash - This is another really delicious yet often overlooked meal basic. If you roast a bunch of squash cubes, they make a great lunch base. Toss with greens, or some leftover pork.

7. White Rice - I don't like white rice as much as brown rice, but if you're making some rice anyway for dinner, make an extra cup and eat it for lunch!

8. Mashed Potatoes - Mashed potatoes are so delicious and comforting when reheated at work! Top with some extra melted cheese.

9. Polenta - Make a little extra polenta; it lasts well in the fridge. It needs a little stirring and extra liquid when you heat it up. You can also pour hot polenta into a baking sheet and let it cool. Slice and serve in squares; this makes for great lunches.

10. Oatmeal - Oatmeal? For lunch? Why yes! Steel cut oats are so filling and hearty, and they reheat splendidly. Make your morning batch a little larger, and eat them for lunch. Here's how to cook steel cut oats. .

A Guide to Cooking with Whole Grains & Baking with Whole Grain Flours Quick Guides to Ingredients

With fall just around the corner, now is the time to stock your pantry with hearty, healthy whole grains! From amaranth to wild rice, get the skinny on whole grain ingredients and whole grain flours below:

Quick Guides to Whole Grains

Amaranth - A tiny poppy seed-sized grain. Malty, grassy flavor. (The leaves of the amaranth plant are also good to eat.) Gluten-free.
Barley, Hulled and Pearl - Chewy, tender grains. Especially good in soup.
Brown Rice - Rice with the hull still partially on. Higher in protein and fiber.
Buckwheat - Also called kasha. Small flower seeds with very toasty, nearly bitter flavor. Gluten-free.
Bulgur Wheat - Dried, precooked particles of wheat.
Farro - Chewy grain very similar to wheatberries and spelt.
Millet - Mildly sweet and nutty, and very small grains. Often used as birdseed. Gluten-free.
Oats - Sold as steel-cut or Irish oats (the whole oat groat, or grain), or rolled into quicker-cooking flakes. Technically gluten-free but often contaminated with gluten, and some GF folks find they can't digest oats well.
Quinoa - Ancient grain of South America. Complete protein, and gluten-free.
Sorghum - Important drought-resistant crop in central Africa. Gluten-free, with mild sweet taste. Can be popped like popcorn!
Spelt - A species of wheat that cooks up chewy and hearty.
Wheat Berres - The whole grain version of whole wheat flour! Great in risottos, soups, and casseroles.
Wild Rice - An intact grain, including the bran, endosperm, and germ, and a distant cousin of white rice varieties.

Looking for a Corn Syrup Alternative? Consider Brown Rice Syrup Ingredient Spotlight

I first discovered it in pursuit of my ideal granola bar recipe, but have since found that it's quite a versatile baking ingredient. It can take the place of corn syrup in many recipes, and its unique nutty-sweet flavor adds depth and character to everything from brownies to a bowl of oatmeal.

2012-09-12-RiceSyrup-2.jpgBrown rice syrup is made by breaking down rice starches into simpler sugars through an enzymatic reaction, straining the resulting liquid, and then boiling it into a syrup. The result is a thick, light brown syrup with the consistency of honey and the nutty, grassy flavor of cooked brown rice. It's less sweet than sugar, but definitely sweet enough to satisfy a sweet tooth.

I use rice syrup most often for making my homemade granola bars. It's an excellent binder and the flavor works well with the other grains, nuts, and dried fruits I use in my bars. I also like it for adding sweetness to savory sauces and braises and use it as I would honey or molasses. If you like the flavor, try drizzling it over oatmeal or pancakes, or using it to sweeten a cup of tea.

In baked goods, brown rice syrup has much the same effect as corn syrup, which is why it makes a good substitute. A little bit of syrup will gives cakes and other baked goods a more tender crumb, a finer texture, and increased browning. Rice syrup will also give brownies and cookies a denser, fudgier texture. The flavor of the rice syrup definitely comes into play, though; I like it in recipes that use whole wheat or other whole grain flours where the earthy and nutty flavors compliment each other.

I'm curious to try rice syrup in candy-making. Its flavor wouldn't work for everything, but I don't see why it wouldn't work from a purely functional standpoint. I'm thinking of trying it in toffees and other candies with deeper caramelized flavors.

Brown rice syrup is widely available at any store with a decent health food or natural foods section. It will keep at room temperature for about a year, but refrigerating does help prolong its shelf life. It can be pretty thick, sticky, and difficult to pour, but warming it slightly on the stovetop or in the microwave will make it easier to work with and mix with other ingredients.

Recipe: Brown Rice Bowl with Maple-Glazed Tempeh & Tahini-Miso Dressing Recipes from The Kitchn

2012_09_12-brownricebowl1ED.jpgA bowlful of brown rice, tempeh, kale, and other veggies has "health food" written all over it, but in our house we hardly think of this recipe as macrobiotic or vegan or anything else but satisfying. Brimming with the perfect balance of flavors and textures, it satiates the senses and even has my barbecue- and burger-loving guy requesting it for dinner.

2012_09_12-brownricebowl2.jpgThis brown rice meal is partly inspired by the "macro bowls" I've had at restaurants like Native Foods, but I've added a few of my own touches. Well-balanced in terms of nutrition, flavor, and texture, it's got nutty brown rice (I like using fluffy brown basmati), savory-sweet maple-glazed tempeh, creamy avocado, crisp and tangy sauerkraut, earthy kale, and salty seaweed. Bringing it all together is my go-to tahini-miso sauce, spiced up with a bit of ginger.

The first time I made this I was a bit apprehensive about serving something so "crunchy" but my omnivorous partner gobbled it up before I could even ask what he thought. (To his credit, he eats even more kale than I do!) All of the components are pantry staples of ours, so we eat this for dinner at least every couple of weeks. For a dish that's so multidimensional, it's actually very simple to make, especially when using precooked brown rice (or quinoa, which is also delicious) and marinating the tempeh overnight.

Brown Rice Bowl with Maple-Glazed Tempeh and Tahini-Miso Dressing

Serves 2

1 tablespoon soy sauce
1 tablespoon maple syrup
1 teaspoon rice vinegar
1 clove garlic, grated or crushed
4 ounces tempeh, cut into 1/4-inch thick slices
1 (6-inch) piece dried wakame seaweed
1/4 cup tahini
1 tablespoon light miso
2 teaspoons lemon juice
2 teaspoons grated ginger
About 1/4 cup warm water
4 cups kale cut into 1/2-inch ribbons
2 cups cooked brown rice
1/2 cup sauerkraut
1 avocado, sliced
1 teaspoon sesame seeds

To marinate the tempeh, combine soy sauce, maple syrup, rice vinegar, and garlic. Place tempeh in a shallow dish, pour marinade over, and turn to coat. Let marinate for at least 20 minutes or as long as overnight in the refrigerator.

Meanwhile, prepare the other components.

To prepare the wakame, place the dried wakame in a bowl and cover with cold water. Soak for 15 minutes to expand. Drain wakame and pat off excess water with a towel. Remove any thick center stems and cut wakame into 1/4-inch ribbons.

To make the dressing, mix tahini, miso, lemon juice, and ginger into a creamy paste in a small bowl. Gradually stir in warm water to achieve the consistency of sauce.

To make the kale, fill a pot with about 1 inch of water and place a steamer basket inside. Bring to a boil. Place kale in basket, cover, and steam for about 5 minutes until tender but slightly crisp.

To finish, cook the marinated tempeh in a lightly oiled skillet over medium heat for a few minutes on each side until golden brown. Halfway through cooking, pour remaining marinade over tempeh.

Divide the steamed kale between two bowls. Place brown rice on top. Then arrange tempeh, sauerkraut, avocado, and wakame on top. Sprinkle with sesame seeds. Serve with dressing on the side.
