Weird and Cool: Geometric Food Art

You don't find perfect lines in the natural world of fruits and vegetablesit's all uneven curves and waves and organic shapeswhich is why it's striking to see Turkish artist Sakir Gkebag's food art. Look! Animated MRI Scans of Vegetables

In case you've ever wondered what your fruits and vegetables would look like put through an MRI machine, well, now you know! Boston technologist Andy Ellison has been doing that exact thing for the last few years, and putting the results up on his blog Inside Insides. The photos you see above (of cucumber, corn, and tomatoes) are just the stills. To get the full effect, you have to see them animated. It's really quite stunning!

Scroll through Inside Insides to see these still shots come to life as animated gifs. A few favorites to look out for: the garlic, the prickly pear, and the onion.

And also, in case you're wondering, he's not misusing the hospital equipment. He told NPR back in 2010 that he takes pictures of the food while he's warming up the scanner (it's a "quality assurance" thing).

EWG's Guide to Budget Grocery Shopping Food News

2012-9-18-ewg.jpgWhen you're on a budget, it can be a challenge to shop for healthy, fresh food, so the EWG took that dilemma to task! Their newest guide assessed nearly 1,200 foods and hand-picked 100 of the most nutrient-dense foods at a good price, from fruits and vegetables to dairy, protein, grains, and cooking oils.

Their recommendations also take into account those foods with the fewest pesticides, contaminants and artificial ingredients. In addition to a quick list of the best foods to buy on a budget, the guide also offers budget-friendly recipe and meal plan suggestions and healthy eating tips. The guidelines are pretty straightforward: fill half your plate with fruits and vegetables, eat beans and lentils in lieu of meat, and skip processed foods. New Study Says Organic Produce Is No More Nutritious Than Conventional Food News

Are organic fruits and vegetables more nutritious than their conventionally-grown counterparts? The debate has raged for years, and now the results from a four-year study conducted by scientists from Stanford University say that, no, organic produce doesn't get any extra points for nutrition. But organic food advocates say the study missed a few key points:

According to The New York Times, the study, which combined data from 237 studies and examined a wide variety of fruits, vegetables and meats over a four-year period, concluded that "vegetables labeled organic were, on average, no more nutritious than their conventional counterparts... Nor were they any less likely to be contaminated by dangerous bacteria like E. coli." The conventionally-grown fruits and vegetables did have more pesticide residue, but "the levels were almost always under the allowed safety limits."

The study did find that organic produce contained higher amounts of phosphorus and more more compounds known as phenols, which some believe can help prevent cancer. But the "size of the difference varied widely from study to study," so researchers took that result with some level of caution. It appears that produce ripeness had more to do with nutritional value than any other factor. As the NYT states, "a lush peach grown with the use of pesticides could easily contain more vitamins than an unripe organic one."

So what does this mean for organic food? Has it just been a marketing ploy to get consumers to pay more? Not so fast. Sonya Lunder, a senior analyst with the Environmental Working Group, says "organic organic food is living up to its promise."

Advocates for organic farming said the Stanford researchers failed to appreciate the differences they did find between the two types of food -- differences that validated the reasons people usually cite for buying organic. Organic produce, as expected, was much less likely to retain traces of pesticides. Organic chicken and pork were less likely to be contaminated by antibiotic-resistant bacteria... The study also found that organic milk contained more omega-3 fatty acids, which are considered beneficial for the heart.

Advocates also say the study "sidestepped" the debate over the current "healthy" levels of pesticides. But regardless, advocates say that nutritional value is only one reason why people choose to buy organic.

[Other reasons people buy organic include] concerns about the effects of pesticides on young children, the environmental impact of large-scale conventional farming and the potential public health threat if antibiotic-resistant bacterial genes jumped to human pathogens.

A Guide to Storing Fruits and Vegetables Tip Roundup

2012_08_28-FruitVegEd.jpgThis past week my CSA pickup share was as bountiful as it's been all summer. A dozen tomatoes, six or seven ears of corn, crisp greens, a pound of peaches. It's quite a sight to lay it all out on the countertop and plan for the week ahead. But it can also be a little daunting. Wait, how do I store fresh herbs again? What's the best way to handle the tomatoes? Do melons go in the refrigerator or on the countertop? With so much produce at our fingertips this season, it's time for a refresher on the proper way to store various fruits and vegetables. Here are the best ways to store apples, tomatoes, fresh basil, and many, many more varieties of fresh produce.

A FEW GENERAL GUIDELINES

Do Not Store Fruits and Vegetables Together. Fruits that give off high levels of ethylene (the ripening agent) can prematurely ripen and spoil surrounding vegetables. (Think of the "one bad apple" adage.)

For Vegetables: Before storing, remove ties and rubber bands and trim any leafy ends. Leave an inch to keep the vegetable from drying out. Make sure the bag you store the veggies in has some holes punctured to allow for good air flow. Pack vegetables loosely in the refrigerator. The closer they are, the quicker they will rot. Leafy greens can be washed before storing by soaking them in a sink full of water, while soft herbs and mushrooms should not be washed until right before they are used.

For Fruits: Non-cherry stone fruits, avocados, tomatoes, mangoes, melons, apples, and pears will continue to ripen if left sitting out on a countertop, while items like bell peppers, grapes, all citrus, and berries will only deteriorate and should be refrigerated. Bananas in particular ripen very quickly, and will also speed the ripening of any nearby fruits.
