Impromptu Holiday Cooking: 10 Simple, Seasonal Suppers

2012_12_03-Pomegranate-Glazed-Salmon.jpgThere are many reasons why having a quick holiday meal in your back pocket, so to speak, is handy this time of year. There are the folks who stop by unannounced, but more often than not, it's simply a crazy time of year and sometimes the simpler the meal, the better.

While our family does go all out on Thanksgiving Day and Christmas Day, the meals leading up to those occasions are usually filled with simple, satisfying meals. I try to balance my mother's meat-heavy tendencies with fresh salads and seasonal fruit and aim to work in whole grains whenever possible.

But when it comes right down to it, 'tis the season of comfort eating and I give in to that around the holidays.

So here are a few seasonal suppers that should carry you through the holidays without stumble or stutter. For a heartier meal, feel free to add diced tofu or shredded chicken or pork to the salad. And while each dish is simple, the brisket does take a night in the slow-cooker, so just plan accordingly there. Otherwise, most of these recipes can be tackled easily early in the evening when you need some speedy winter inspiration.

Gluten-Free Holiday Baking: 10 Thanksgiving Dessert Recipes, Plus Tips! Recipe & Tip Roundup

Holiday baking is now in full swing, with pies, tarts, crisps and cookies popping up on food blogs and in full-page magazine spreads. Gluten-free cooks shouldn't feel discouraged, though: there are plenty of delicious gluten-free dessert options for the holidays! We found gluten-free versions of a few classic Thanksgiving desserts, from Pumpkin Pie to Apple Crispand a few even went above and beyond the norm.
