Dutch Oven Recipe: White Bean & Chicken Sausage Stew Recipes from The Kitchn

2012_11_01-DSC_0779.jpgThis is the time of year when Dutch ovens come into their own. Even if you use your big, heavy Dutch oven year-round, as I do, it still seems to come down off its shelf a little more often in the fall. Today I want to show you my favorite Dutch oven and a soup to cook in it. This soup is one of those magical recipes with just a few ingredients, and all the usual suspects carrot, onion, beans, chicken broth that nevertheless turns out to have such a deep, wonderful flavor you don't mind that it makes enough to feed you for a week. And a Dutch oven is really the best vessel for it, because this soup is cooked just a little differently.

2012_11_01-DSC_0767.jpgMy favorite Dutch oven at the moment is this beauty from Staub. It was a Christmas present from my husband, and he knows what I like, because this classic oval oven, with its handsome brass knob and smooth black interior, has become perhaps my favorite tool in the kitchen.

Here are a few reasons I especially like this Dutch oven, besides its obvious beauty, which lets me bring it straight to the table from the kitchen. I like that the interior is black enamel, instead of the more common white, because it doesn't show stains. I also like the size 5 quarts which is big enough for a haunch of lamb or a roast, as well as most soup recipes, without being so big and heavy that I can't manage it. I like the shape, which offers enough surface area to brown meat while still fitting neatly on a burner and in my oven.

Which brings me to the point of this recipe: the oven. I love cooking beans in the oven, and when it came time to simmer this simple, slow-cooking bean soup, I decided to throw it in the oven instead of leaving it on the stove. I found that the result gave me creamier, more tender beans and a deeply flavorful soup. I think that all-around heat of the oven does this. The gentle heat of the oven also means that soups and stews cooked in it are more hands-off. I just put the heavy, well-fitting lid on this pot and let it simmer away, without worrying my soup will burn or cook down too far.

In the end, this soup can be cooked in any heavy pot or Dutch oven and on the stovetop, instead of in the oven, for that matter. But I loved it in this pot, which honestly inspires me every day. This time of year, I look for any excuse to pull that pot down, and a pound of beans and some leftover chicken sausage were ample reason to stand over the stove on a chilly morning and enjoy a few minutes with my Dutch oven.

One last note on this soup: As written, it's a hearty, chunky bean stew that makes enough to feed a couple people for a week. But it's also very generous: If you want to stretch it out even further, add another 4 to 8 cups of broth or even water. A little simmering and the rich flavor will quickly spread through the extra liquid.

White Bean & Chicken Sausage Stew

Serves 6 to 8. Freezes well.

1 pound dried small white beans, such as Vallarta Beans from Rancho Gordo
1 tablespoon olive oil
6 ounces cooked chicken sausage, such as Applegate Farms Organic Fire Roasted Red Pepper Sausage, diced
2 large stalks celery, diced
2 large carrots, peeled and finely diced
1 large onion, diced
6 cloves garlic, minced
4 cups low-sodium chicken broth
Salt and freshly ground black pepper
2 bay leaves
3 tablespoons cider vinegar

The night before you want to cook this soup, soak the beans by placing them in a bowl and covering them completely with cold water.

The next day, heat the oven to 300F. Heat the olive oil in a large (4-quart or larger) Dutch oven or heavy pot over medium heat. Add the sausage and turn the heat up to medium-high. Cook, stirring frequently, until the sausage has browned about 10 minutes. Stir in the diced celery, carrots, onion, and garlic and cook over medium heat for another 10 minutes until they are soft. Drain the beans and stir them into the vegetables.

Pour in the chicken stock and an additional 4 cups water. Season with 1/2 teaspoon salt and a generous quantity of black pepper. Drop in the bay leaves. Bring the soup to a boil, then cover and put in the oven.

Cook for 2 to 3 hours in the oven, or until the beans are very soft and creamy. (Time can vary widely depending on the size of beans you use.)

The soup can also be cooked on the stovetop over low flame. It will need a similar amount of timing for cooking, and should also be cooked with the lid on. Check a little more frequently to make sure the bottom isn't scorching.

Stir in the cider vinegar and salt to taste (I used about 1 1/2 teaspoons). Continue cooking for another 20 to 30 minutes, or until the beans have absorbed some of the salt.

Serve with fresh crusty bread. Leftovers freeze well.

Recipe: Cuban Black Bean Soup Recipes from The Kitchn

20121007-DSC_9328.jpgWhen I was a kid, we lived in Miami, and we had a Cuban neighbor whom I now only remember as "Mrs. Garcia." She had arrived in Miami via boat from Cuba, and I don't know where she is now, but she gave my mother her recipe for black bean soup, which I still use to this day. So wherever you are, Mrs. Garcia, thank you for this recipe. It has ruined me for all other black bean soups; nothing I've had in Cuban restaurants matches up to this.

20121007-DSC_9312-2.jpgWhile the ingredient list and preparation time of this classic soup are both short, the soup itself takes several hours to cook and the beans have to be soaked overnight, so I think this is best made on the weekend, when you'll be home all day to stir and season the soup as it cooks. It fills the house with a wonderful aroma, too, which is a bonus.

And last but not least: The vinegar is the secret ingredient; it makes the soup more creamy and gives it a little "tang."

Tester's Notes
I love black bean soup, so I had been meaning to try this recipe of Kathryn's for a long time. Black bean soup reminds me of my years living in Florida, where soups like this one were menu staples of many of the restaurants in my neighborhood.

This soup does not disappoint. It has the depth of flavor that beans develop as they cook, slowly not to mention the richness from a ham hock slowly falling apart in the pot. The soup was extremely easy and quick to prepare it took me 5 minutes to refill the bean pot and add the vegetables. It cooked, long and slow, and covered with a lid so I didn't even have to worry about the water boiling off.

The result was an irresistibly creamy soup and a lot of it! This is one to make, eat for two days, and then freeze as a little care package for your future self. - Faith

Mrs. Garcia's Black Bean Soup

Serves 8 or more

1 pound dried black beans
1 medium onion, finely chopped
1 green bell pepper, finely chopped
3 cloves garlic, minced
1 ham bone or smoked ham hock
1/2 cup olive oil
Salt and freshly-ground black pepper
1/3 cup white or cider vinegar

To garnish:
Sour cream
Chopped raw onion
Chopped red pepper

The night before cooking the soup, place beans in a colander and wash them with cold running water. Pick out any rocks or beans that are broken or shriveled. Put the beans in a large (4 quarts or larger) Dutch oven or soup pot with a lid and cover with enough cold water so that it comes to one inch over the top of the beans. Soak overnight.

The next day, drain the water out of the pot and refill with clean cold water. Add enough water so that it comes an inch above the beans. Stir in the chopped onion, pepper, and garlic. Add the ham bone or hock, and stir in the olive oil. Add 2 teaspoons salt and a generous quantity of black pepper.

Bring to a boil over high heat. Skim off any white foam, then reduce the heat to low and cover. Simmer for 4 to 5 hours, until the beans are very soft and the soup is creamy, not watery. Check after 2 hours. If the beans seem dry or stewy, add another cup of water. The final consistency should be velvety and thick, and the soup should coat the back of a spoon. (The beans will soften in the first two hours. The goal is to continue cooking the soup until some of the beans break down and create the smooth, thick soup base.)

Stir in the vinegar and simmer for an additional 15 minutes, uncovered.

Serve over rice (optional) and garnish with chopped raw onions and sour cream. Also, if you like, little bits of chopped chicharrnes can be garnished on top. Add some sweet fried plantains as a side dish!

This makes a large pot of soup, but it freezes very well.

Recipe: Mixed Bean Masala with Fragrant Yellow Rice Recipes From The Kitchn

2012_09_25-BeanMasala01.jpgMy stepdad brought Indian home cooking into my life. He and my mother had been high school sweethearts, American students at an international school in the foothills of the Himalayas where my stepdad had grown up, stuffing himself on dal and pappadums throughout childhood and cultivating a lifelong craving for fragrant vegetarian curries. Thanks to him and to recipes like this mixed bean masala, it's a craving I now share. Quick, healthy and economical, it's an easy recipe to double and freeze in preparation for chilly winter nights, when the scent of onion, ginger and spices bubbling on the stove will warm up the whole house.

This recipe is a riff on chana masala a curry of spiced chickpeas in a gingery tomato sauce using any type of cooked bean you happen to have on hand. You can use just one type of bean, but for color and texture variety, I like using a mixture. (I doubled the recipe for the batch pictured above, and used a mix of white beans, black beans and chickpeas.) Although plain white or brown rice is a fine accompaniment, my favorite way to eat curries like these is spooned over turmeric-spiced yellow rice, which looks special, but is just as easy to make as plain rice.

The key to the tomato sauce is blending the onion, garlic and ginger into a smooth paste that is added to the pot after the dry spices have been fried in a little oil. The warmed spices and aromatic paste meld with the tomatoes into a smooth and very flavorful sauce. After adding the beans, some fresh cilantro, and chilies if you like it spicy, you let everything simmer for 30 minutes, just enough time to make a pot of yellow rice, and then dinner is served.

One batch is enough to give my two-person household dinner and enough leftovers for a couple of lunches, but when I really want to maximize my time in the kitchen, I double the recipe and freeze the extra for future meals. The rice recipe can be doubled and frozen too; as long as it is kept separate from the sauce until serving, it won't become mushy, and you'll have a nourishing meal in the freezer, ready to heat when you need it.

Mixed Bean Masala

Makes 6 servings

1 onion
2 cloves garlic
1-inch piece of ginger, peeled
1 tablespoon water
2 tablespoons vegetable oil
1 teaspoon ground cumin
1 teaspoon garam masala
1/2 teaspoon ground coriander
1/2 teaspoon salt (more if canned tomatoes are unsalted)
1 28-ounce can chopped tomatoes
2 15-ounce cans beans, drained and rinsed
2 tablespoons cilantro, coarsely chopped, plus more for serving
Chopped fresh chilies or red pepper flakes to taste (optional)
Fragrant Yellow Rice, for serving (recipe below)
Plain yogurt, for serving (optional)

Roughly chop the onions, garlic and ginger. Process in a food processor or blender until a smooth paste forms, adding up to 1 tablespoon water if needed.

Heat the oil in a large saucepan over medium heat and add the cumin, garam masala and coriander. Fry the spices for 1 to 2 minutes, stirring frequently, until fragrant. Add the onion-ginger paste and cook for another 2 minutes, stirring, until most of the added water has evaporated. Add the salt, tomatoes, beans, cilantro and chilies or pepper flakes, if using. Bring to a boil and lower heat. Simmer uncovered 30 minutes, stirring occasionally. Taste and adjust seasoning. Garnish with additional chopped cilantro and serve over rice, with a dollop of yogurt on the side.

Fragrant Yellow Rice

Adapted from Madhur Jaffrey's Indian Cooking. Makes about 6 cups cooked rice

2 cups jasmine rice
2 cups water
1 bay leaf
2-inch piece of cinnamon stick
3 whole cloves
3/4 teaspoon turmeric
1 teaspoon salt
2 tablespoons butter or olive oil

Rinse the rice 2 or 3 times and drain. Add the rice, water, bay leaf, cinnamon, cloves, turmeric and salt to a medium size pot and bring to a boil over medium-high heat. Cover, turn the heat to low and cook for 10 minutes. Remove pot from heat and let sit, still covered, for 10 minutes. Uncover and remove the bay leaf, cinnamon stick and cloves. Add butter or oil and stir.

Additional Notes
If you want to substitute another type of rice (basmati, brown, etc.), increase the amount of water and cooking time according to the package directions.

To freeze, let finished stew cool, then pack into freezer bags or freezer-safe containers and store in the freezer for up to 3 months. Rice can also be frozen in a separate container. To reheat the beans, thaw in the refrigerator overnight or in the microwave, and warm in a pot on the stove until bubbling. The rice reheats best covered in the microwave.
