What Kind of Cook Are You? Weekend Meditation

2013_03_04-kitchenbuddha.jpgI started to take an online quiz the other day but stopped short when it asked me what kind of cook I thought I was. My choices were something like Generous (enthusiastic and sharing), Methodical (likes long, complex kitchen projects), Innovative (goes for the new and unusual), Competitive (into impressing and being the best, having the best), Healthy (interested in freshness and nutrition). I was only allowed to pick one but what I ended up clicking on was the button to take me away from the quiz. Each choice was both too much and not enough, and the idea of choosing just one was frustrating.

Of course, online quizzes aren't the best place to look for your true self, that much has been obvious to me since my pre-teen years when I would steal my mother's Cosmopolitan magazines and secretly take the romantic compatibility tests. But sometimes those quizzes do ask questions that lead one to a deeper consideration. How would I describe myself as a cook? What kind of cook am I?

It didn't take long for me to discover that in no way was I just one kind of cook. In fact, looking back on that list (generous, innovative, competitive, healthy, methodical) I would've had to click all five choices if I were to be perfectly honest and would probably need several other choices if I really wanted to present a complete picture. (Lazy, meandering, romantic, practical, curious, and accident prone come immediately to mind.)

But thinking about it even further, the list expands and lengthens because on some days I'm a confident expert, knowing exactly what I am doing and on others, I haven't a clue. Sometimes I'm the kind of cook who has crackers and cheese for dinner and on others, it's an elaborate soup with fresh baked bread and a garlicky side salad. Yes, Mr Whitman, I do indeed contradict myself. Yes I am large, and yes, I contain multitudes.

While it's very important to know ourselves, to be aware of our strengths and weaknesses, we also have to be careful not to limit ourselves by our own stories. Declaring yourself to be an impatient cook and therefore not suited for bread making or too clumsy of a cook to bone a fish may be (somewhat) true but it's also true that you can be an impatient bread maker and let the bread making teach you patience, or allow the fishbones to show you grace. In other words, don't let your stories stop you from trying something new, something outside of your usual patterns. Don't let your ideas about who you are dictate who you are.

I leave you with a challenge: do something against your character today. Try being the kind of cook you're not. Allow yourself to be sloppy if you're neat, or dabble in modernist cuisine if you're usually all about the roast chicken and bread salad. Think you're a baker and not a cook? Then it's Bouillabaisse for you today! Do you never measure anything? Then find a recipe and follow it exactly. Watch what comes up for you when your stories arise and watch what happens when you let them go. Notice where there's freedom. Do you find it in the story or is it in what happens when you let the story go?

What's the Best Way to Store My Late Mother's Recipe Collection? Good Questions

2012_11_28-MomsRecipesGQ.jpgQ: Almost two years ago, I lost my mother she was 54 and I was 25. Many of her personal items were also lost during this time and I've always been heartbroken over losing her handwritten recipes and books. She was a wonderful cook, and especially loved to cut out recipes from newspapers and magazines.

The other day I dreamt about her, which prompted me to go through the boxes of her belongings in my closet. Suddenly, I stumbled upon a large box with her handwriting on the outside: Important recipes. I opened it up to discover all of her handwritten recipes on cards, yellowed from age and splattered with food from past times in the kitchen. I don't know how I missed it or thought it was gone! She was also an avid newspaper reader, so I have a few articles that she cut out. The first one I found was titled, "Sure, you can cook just like mom."

Immediate tears, of course. She was speaking to me somehow.

Now, the question is: How should I organize all of her recipes, especially the handwritten ones? I'm concerned the writing will someday fade. Would laminating be the way to go? Any thoughts from your readers?

5 Essentials for the Home Cook: Chef Preeti Mistry's Best Flavor Boosters Expert Essentials

We begin our series with Preeti Mistry, a Top Chef contestant in 2009 and a former Google chef. Read on for Preeti's top five tips for a home cook looking to build flavor.

2012_10_31-preeti2.jpgPreeti trained at Le Cordon Bleu in London, where she was born, and currently lives in Oakland, CA. She is in the process of opening a restaurant in the Bay Area called Juhu Beach Club where she will serve Indian street and snack food. Here she offers five great ways for home cooks to boost flavor.

Preeti Mistry's 5 Essentials for the Home Cook

1. Understand salt. How can something be full of flavor but still not taste right? The answer is probably salt. Preeti recommends that cooks salt throughout the cooking process and not just at the end. Always salt onions while sauting as salt helps to release their liquid, just like when you salt an eggplant before cooking.

2. Understand acid. Acid (vinegar) in a vinaigrette is obvious but rich, creamy, unctuous dishes benefit from a touch of sour, too. A dash of vinegar in cream of cauliflower soup, for instance, or a few drops of lemon juice in a celery root puree. Lemon and lime juice, vinegar, tomatoes, tamarind, and sumac all are acid/sour additions that will add brightness and balance flavor.

3. Roast and grind your spices ... every time. Preeti has a coffee grinder dedicated to grinding spices. Roasting and grinding whole spices makes all the difference, she says, and not just for Indian food but all of your dishes. She firsts roasts them in a dry frying pan over medium heat, shaking the pan until they become fragrant and there is a light hint of smoke. Then she immediate pours them onto a cool plate to stop the cooking. (Burnt spices are very bitter.) When cool, she whizzes them in the grinder and uses them in her recipe.

4. Grow fresh herbs. Preeti always keeps fresh herbs on hand in her home kitchen. They're not that hard to grow in pots, she insists. Which herbs to grow? The ones you use the most, but in particular she recommends thyme, rosemary, oregano, sage, and parsley. Fresh herbs are indispensable. Use them in sauces, for marinating chicken, and for braising beans.

5. Salted anchovies. Preeti always has salted anchovies in her pantry. They add the most amazing depth and they don't taste fishy like most people think. Add the anchovies when you are sauting onion and garlic, breaking them up with your spoon. They will dissolve into the onions, adding a special savoriness that will be hard to identify, but delicious.

Bonus recommendations: Preeti was quite effusive with her recommendations and also mentioned the Microplane zester and to always have plenty of prep bowls on hand for mise en place. Finally, she highly recommends that Americans get over their fear of deep frying, buy a wok thermometer, and start making French fries, samosas, fish and chips and of course, fried chicken.

Recipe: Vegetable Biryani Rice Recipes from The Kitchn

2012_10_03-biryani1.jpgFluffy fragrant rice, richly spiced vegetables, and a scattering of raisins, cashews, and herbs make up this colorful and warming biryani. Whether you eat it as a one-dish meal or as part of an Indian feast, it's well worth the effort to prepare.

2012_10_03-biryani2.jpgBiryani of which there are dozens of variations in India, Southeast Asia, and the Middle East is comprised of layers of rice and vegetables or meat. The first time I made vegetable biryani at home, I hesitated at the long list of ingredients and multi-step cooking process. No wonder it's one of the more expensive items on the menu at my local Indian restaurant! But I soon came to appreciate the special nature of this dish and, truly, it seems more complicated than it really is.

2012_10_03-biryani3.jpgWhen making biryani, I recommend using Basmati rice; the long grains of of this rice are perfectly soft and don't stick together. The mixture of vegetables in this recipe is quite flexible, and you can use raw or frozen veg like broccoli, cauliflower, carrots, peas, and green beans. The rice and vegetables are cooked separately with a heady blend of spices and then layered in a dish and topped with crunchy nuts and sweet raisins. When spooned onto a plate, all the components get mixed together and provide a beautifully satisfying blend of flavors and textures.

Vegetable Biryani Rice

Serves 6-8

Rice:
2 cups basmati rice (white or brown)
3 cardamom pods, lightly crushed
1 bay leaf (preferably Indian)
1 cinnamon stick
1 teaspoon kosher salt

Vegetables:
6 cups chopped mixed vegetables (such as broccoli, cauliflower, carrots, peas, green beans; can use raw or frozen)
3 tablespoons ghee or vegetable oil
1 large onion, thinly sliced
4 cloves garlic, minced
2-inch piece ginger, minced
3 cardamom pods
3 cloves
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cayenne pepper
1/8 teaspoon coarsely ground black pepper
1/4 cup water
1 1/2 teaspoons kosher salt
1 large pinch saffron dissolved in 1/4 cup warm water

Garnish:
1 teaspoon ghee or vegetable oil
1/4 cup golden raisins
1/4 cup cashews
1/4 cup chopped cilantro

Rinse the rice 3-4 times until the water runs clear. Soak the rice in water for at least 30 minutes and drain.

Bring a medium pot of water to a boil. Add the rice, spices, and salt. Boil until the rice is just tender and chewy (neither soft nor crunchy), about 10 minutes. Drain well. Return to the pot and cover to keep warm.

Briefly steam the vegetables until just tender but still crisp.

Preheat oven to 350F.

In a large skillet or saucepan, heat the ghee or vegetable oil over medium-high heat. Cook the onion, stirring, until translucent. Add the garlic and ginger, and cook, stirring, for a minute. Add the spices and cook, stirring, for another minute. Add the water, vegetables, and salt, reduce heat to medium, and cook, stirring occasionally, until the vegetables are warmed through.

Spread half of the rice in a 9x12-inch baking dish. Spread the vegetables evenly on top and then the remaining rice. Drizzle the saffron-water mixture on top. Cover the dish with a lid or aluminum foil and bake for 15 minutes.

While the dish is in the oven, heat the ghee or vegetable oil in a skillet over medium heat. Add the raisins and cashews and cook, stirring, until the raisins are plump and the cashews are toasted.

To serve, garnish the biryani with raisins, cashews, and cilantro. Serve warm as a main or side dish. Delicious with yogurt or raita.

What Are Some Quick, Healthy Meals That Will Appeal to My Picky Toddler & Me? Good Questions

My usual cooking strategy is to make a few big casserole-type meals and eat leftovers throughout the week, but recently my son decided he doesn't like interesting food, so I'm either stuck with a boring meal or too many leftovers to finish.

We also wind up eating way too late on the nights I do cook. I'd love some suggestions from other working single parents. What do you like to cook that's quick, low-cost, healthy, tasty and good for picky eaters?

Can You Recommend Diabetic-Friendly Cookbooks Aimed at Non-Diabetic Cooks? Good Questions

2012_09_17-DiabeticCookbookGQ.jpgQ: My dad was recently diagnosed as pre-diabetic, and he needs to make some big changes in his eating habits. He is an amazing cook who makes dinner on a nightly basis, but those dinners are filled with carbs, which he needs to cut down on.

He is not really quick to embrace new health food trends and wants to avoid changing his cooking lifestyle completely. I also know for sure that he will not cook from a book that has the word "diabetic" in the title he's just too stubborn. Do you know of any good cookbooks or recipes for diabetics that are kind of disguised as regular cookbooks/recipes?

Unsafe Food Handling: Do You Say Anything to Your Host?

2012-08-16-FoodSafety.jpegSummer is all about hot weather, cook-outs and no-fuss parties, and sometimes this easy attitude extends to the raw chicken your host has left marinating on the counter for several hours before getting it on the grill. As a cook with some food safety knowledge, you know this is dangerous, but as a guest, you're hesitant to speak up. What do you do?

This was a dilemma recently faced by John Birdsall at CHOW:

One of your hosts is grilling his famous Yucatan chicken, and in the kitchen, you spot it, smeared with achiote paste, covered in plastic, but sitting out on the counter. It looks like it's been marinating there for a while. It stays unrefrigerated for the couple of hours you drink margaritas and talk, and sits around a while longer after it comes off the grill.

Food has a "danger zone" between 40F and 140F; between these temperatures, bacteria grows readily, doubling in number in as little as 20 minutes. Food shouldn't remain at this temperature for more than two hours, or one hour if the weather is hot. But not all home cooks knows this, or some know and just don't care either way, a guest who notices the problem is faced with the choice between an awkward encounter with the host or potential illness.

Birdsall chooses to keep quiet with his host, but regrets the decision when he comes down with symptoms of salmonella poisoning about 48 hours after the meal. "You totally should have said something," he tells himself. "You totally should have been that guy."
