Holiday Recipe: Peppermint Cream Squares Recipes from The Kitchn

2012-12-10-PeppermintSquares-4.jpgLast year, I shared an old favorite recipe for Peppermint Cream-Filled Butter Cookies, which are infamous in my family for being both ridiculously tasty and also ridiculously tedious to make. This year, I thought I'd try tweaking the recipe just enough to keep all its most swoon-worthy qualities while trimming away the labor. The result might, just maybe, be better than the original.

2012-12-10-PeppermintSquares-2.jpg2012-12-10-PeppermintSquares-3.jpgThe most annoying part of the original cookie recipe is working with a dough that is too soft when warm but too brittle when cold, leaving a narrow window within which to actually roll out and shape the cookies. I thought I'd use this frustrating quality to my advantage with these bar cookies: first you scoop out some of the dough and let it chill until completely stiff. The remaining soft, warm dough is pressed into a pan and baked like shortbread. You make the peppermint cream filling while the bottom layer bakes, then pour it over the warm shortbread. That reserved bit of now-chilled dough gets crumbled over the top before baking the bars a second time. See?! The best of both worlds.

I made a few other tweaks to the original recipe, particularly adding a few extra spoonfuls of cream cheese to the filling. This keeps that middle layer creamy and soft even after baking. I love the sweet vanilla-peppermint flavor that the peppermint candies give this filling, but if you'd like more minty oomph, definitely feel free to add some peppermint extract.

The only step that remains just as much of a hassle as the original recipe is pulverizing those peppermint candies into a powder. Make double-sure that you buy soft mint candies not the hard ones that are available year round, which can damage your food processor. The most common brand I've found is Bob's Sweet Stripes (see link below). If you have some extra energy or want to relieve holiday stress, you can take the candies outside and smash them with a hammer instead of using the food processor. Either way, the goal is a fine powder with pieces no larger than rock salt.

Settling down with a glass of cocoa and one of these bars at the end of the day is a very happy thing indeed. I'll definitely make my childhood version of these cookies again No worries, Mom! But...maybe next year.

Peppermint Cream Squares

Makes 16 squares

For the shortbread:
1 cup unsalted butter, softened
1/2 cup powdered sugar
1/2 teaspoon salt
2 cups all-purpose flour

For the peppermint filling:
30 soft mint candies
1 cup powdered sugar, divided
1/4 cup cream cheese
2 tablespoons whole milk
Peppermint extract (optional)

Heat the oven to 350F. Line an 8x8 baking dish with parchment so that the ends hang over the sides of the pan. Coat the parchment and exposed sides of the pan with nonstick spray.

To make the shortbread, beat the butter in a stand mixer or with a hand blender until it is creamy. Scrape down the sides of the bowl and add the sugar. Beat again until the butter and sugar are light and fluffy, like frosting. With the mixer on low speed, beat in the flour until the dough comes together and no more dry flour is visible.

Scoop out about 1/2 cup of the dough, transfer it to a covered container, and refrigerate. Scrape the remaining dough into the baking dish. Press the dough flat with buttered hands, pushing the dough into the corners and smoothing the top. Bake for 20-25 minutes, until the shortbread is turning golden around the edges. Remove from the oven and cool for 10 minutes.

While the shortbread is baking, prepare the filling. Place the soft mint candies the bowl of a food processor and pulse until they have broken down into powder with pieces no larger than rock salt. Be forewarned: this will make an enormous racket! Alternatively, you can place the candies in a sturdy plastic bag, go outside, and smash the candies with a hammer. (A fantastic holiday stress-reliever.)

Mix the powdered candies with 1/2 cup of the powdered sugar and set aside. In a separate bowl, whisk together the cream cheese and milk. Warm briefly in the microwave if the cream cheese is too stiff. Add the remaining 1/2 cup of powdered sugar and 3/4 cup of the powdered candy mixture to the cream cheese. Whisk to form a thick paste. Taste and add peppermint extract in 1/4 teaspoon increments if you'd like a stronger peppermint flavor.

When the shortbread has cooled but is still warm to the touch, pour the peppermint cream mixture over the top and spread it evenly into the corners. Remove the reserved shortbread dough from the oven and crumble it evenly over the top of the peppermint cream (or grate it on the large holes of a cheese grater).

Bake the peppermint bars for another 10-13 minutes, until the edges are just starting to bubble. The crumbs will still be fairly light-colored. Let the bars cool in the pan for 15 minutes and then sprinkle the top with a few tablespoons of the remaining peppermint powder (you may not use it all) while the bars are still warm. Let the bars cool completely, then lift them from the pan and cut into squares.

Peppermint squares will keep in an airtight container for about a week.

Make Mongers of the Kids: My Picks to Help Introduce Children to Fine Cheese The Cheesemonger

10_28-cheese4-ED.jpgI don't have kids. But I'm an aunt. And the other day, I decided to involve my twin niece and nephew in a tasting designed to gauge their openness to so-called grownup cheeses. Because while I can't blame my busy sister for feeding her kids quesadillas with pre-shredded cheese, I've always wondered if she doesn't give their palates enough credit.

Here, the results on how various cheeses fared, plus other ideas for gateway cheeses to feed the kiddies.

10_28-cheese5.jpgMaybe it's precisely because I'm not a mother, but I've always kind of thought that children get the short end of the stick when it comes to food. Why do we automatically assume that they like only the most simple of things?

There's something to be said for exposing young kids to new flavors. Sharing food builds bonds, inspires a sense of family, and prepares your young'ins for a life full of unique and fulfilling food experiences. Plus, it's much more fun to raise an adventurous eater than a picky one.

Bloomy Rinded Cheese
I started our tasting with a bloomy rinded sheep milk cheese from Andante Dairy. Thought I'd begin with something creamy and mild, with just an ever-so-subtle gamey funk from the sheep milk. They both ate it up, entirely undeterred. I believe the exact words my nephew used were "yummy in my tummy." And that white, skin-like rind? Ate it without a second thought. No digging out the insides of brie wheels for these relatives of mine.

Conclusion: If kids enjoy mild creamy cheeses like Havarti or Monterey Jack, they very well might make strides into the world of bloomy rinded cheeses, like bries, camembert, or even young and creamy mixed milk, robiola style cheeses.
Try: La Tur, Brunet, Vermont Butter and Cheese Bonne Bouche, Rochetta, Jasper Hill Farm Constant Bliss or Moses Sleeper, Brie de Nangis, or Fromage D'Affinois.

Aged Gruyere
Next up was an 18-month aged Gruyere, sharp and nutty. Again, a pretty easy sell. "Like pizza!" said my niece. They're both big fans of grilled cheese. And I couldn't help but think how much more complex a lunch they could have with some melty Swiss Gruyere instead of their typical American singles.

Conclusion: If you've introduced your kids to simple, mild Swiss cheeses like Jarlsberg or Emmenthaler, they'll probably go for other strong aged cheeses in the mountain cheese style, or even aged Goudas, which are also characterized by sweet and nutty flavors.
Try: Gruyere, Comte, Aged Appenzeller, Fontina Val D'Aosta, Hoch Ybrig, Boerenkaas, Noord Hollander, Vincent Van Gogh Gouda, Prima Donna

Farmhouse Cheddar
I know they both love cheddar, and so next I tried them out on a farmhouse cheddar. Farmhouse cheddars are strong. Musty tasting, like earth or hay or a cave. I had Cabot Clothbound cheddar from Vermont, and perhaps had I chosen Keen's or another stronger English one they'd have been more opposed, but again, they were total takers.

Conclusion: Go beyond a mild block cheddar. Try something aged and sharp to start, like a New York state block cheddar aged for a year or more, and then venture into English-style cheddars that are cave-aged and earthy. There are some interesting French cheeses that have cheddar-like qualities, too, like those in the Cantal family.
Try: Cantal, Cantalet, Salers du Buron, Quicke's Cheddar, Double Glouchester, Fiscalini Bandaged Chedddar, Beecher's Flagship Reserve, or Cabot Clothbound Cheddar

Real Parmigiano-Reggiano
Next up was a wedge of Parmigiano-Reggiano, which my nephew promptly grabbed and started eating whole. My sister has since had to figure a way to coerce him to eat parm by the slice as opposed to the entire piece.

Conclusion: Your kids might be obsessed with Parmigiano-Reggiano, like my nephew. If you buy pre-grated or even canned domestic parmesans, try going for the real stuff. Or pecorinos.
Try: Parmigiano-Reggiano. If your kids like this, they're set for life. And then venture into other Italian-style aged cheeses, like aged Pecorino Toscanos and Pecorino Romano.

Blue Cheeses
Finally, I ended with blue. Sadly, and expectedly, this wasn't terribly well received. A bit of reverse psychology would have worked better, because I really went in for the kill with some positive reinforcement, presenting the sampling with perhaps a bit too much reinforcement.

Conclusion: Maybe blues aren't the best for young kids, but it's well worth a shot. Start with mild blues.
Try: Fourme D'Ambert, Montbriac, Cambozola, Gorgonzola Cremificato

For other ideas, use what you know your kids already like as a springboard for other cheeses to try. If they're into cream cheese and mozzarella, introduce them to other fresh cheeses that are stronger, like fresh goat cheese. And if they like the fresh goat, go towards aged versions, like Humboldt Fog, Haystack Mountain's Haystack Peak, Coupole, Chevrot, Chabichou du Poitu, and Crottin de Chavignol. And if they like munster or even red wax gouda, try slightly more stinky cheeses, like Taleggio, Fontina Fontal, or Meadowcreek Dairy's Grayson.

And if they don't like what you give them, try and try again.

What Are Some Savory Recipes That Use Cream Cheese? Good Questions

Fall Breakfast Recipe: Pumpkin Muffins with Eggnog Cream Cheese Swirl Recipes from The Kitchn

2012_10_16-DSC_9850.jpgIt's fall, and time to indulge my love of all things pumpkin. Pumpkin pasta, pumpkin gratin, pumpkin pie, that ever-popular pumpkin spice latte and perhaps most of all pumpkin muffins. I love having a warm, tender muffin in the morning for breakfast. These fit the the bill, spiced and moist. But fall will be over so quickly, and winter will be here, so I decided to make sure these would carry through properly to the holidays! Why not a little swirl of eggnog-flavored cream cheese? Pumpkin and eggnog? This is one clash of holiday flavors that I love, and I hope you will too!

2012_10_16-DSC_9786.jpgI confess I love just about any muffin or cupcake a little better when there's cream cheese involved. These get just a swirl not too sweet, and not too much of cream cheese spiced with nutmeg and livened up with rum. It's a little kick of eggnog in the tender, gingery muffin. Some of cream cheese filling spills over the top in a swirl, and some of it stays in the center of the muffin as a creamy surprise.

Muffins are perhaps the best take-and-go breakfast, and they can double as a snack or even dessert. Top one of these off with a squirt of whipped cream for a not-too-sweet little cake to close a fall meal of soup and salad.

Pumpkin Muffins with Eggnog Cream Cheese Swirl

makes 12 muffins

For the filling
8 ounces cream cheese, softened at room temperature for an hour
2 large egg yolks
1/4 cup sugar
1 teaspoon vanilla
1 tablespoon dark rum
3/8 teaspoon nutmeg
1/8 teaspoon cinnamon

For the muffins
1/2 cup unsalted butter, melted and cooled
2 large eggs
1 1/3 cups pureed pumpkin
1 cup light brown sugar
2 tablespoons unsulphured dark molasses
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Dash of freshly-ground black pepper

To make the filling, whip the softened cream cheese with a whisk or hand mixer until very smooth and creamy. Whip in the egg yolks, cream, vanilla, rum, nutmeg, and cinnamon. (Can be made a day ahead and chilled in the refrigerator, if desired.)

To make the muffins, heat the oven to 375F. Line a 12-cup muffin pan with paper liners.

Whisk together the melted butter, eggs, and pumpkin. Add the brown sugar and molasses and whisk until smooth. Dump in the flour, baking soda, salt, ginger, cinnamon, cloves, and black pepper, and whisk until just combined. The batter will be relatively thick.

Take out about 3/4 cup batter and set aside. Divide the remaining batter evenly between the prepared muffin cups. They will be nearly full. Use a spoon to poke a deep cavity in the center of each muffin, and fill this cavity with the chilled cream cheese mixture. Put a tablespoon of the reserved batter on top of the filling.

Bake for 25 minutes or until the filling in the center is puffed and set, just barely golden brown, and the muffin batter is fully cooked through. Cool at least 5 minutes before eating.

If you're feeling celebratory, serve with a squirt of whipped cream and a sprinkle of nutmeg.

Store for up to 5 days at room temperature in a covered container.

Dessert Recipe: Hot Baked Nutella & Cream Cheese Sandwich Recipes from The Kitchn

2012_09_18-DSC_7806.jpgI put the word dessert in the title of this recipe to make sure that this crisp, gooey temptation didn't accidentally find its way into your lunch. Or dinner. This isn't a meal. It's not a snack. It's really not for breakfast. Truly. I'm warning you. Just trying to do my duty.

2012_09_18-DSC_7825.jpgThis is all dessert. Here's what's involved: Nutella (obviously). Cream cheese. A sprinkle of salt, and the best crusty Italian bread you can find, sliced as thin as you can.

When all of this is heated up in the oven, with a crisp toasted exterior and hot, gooey interior, oozing with tangy cream cheese and the scent of chocolate and hazelnuts, you'll see what I mean. A drizzle of chocolate makes it extra impractical for breakfast or lunch. This is dessert, in the guise of a sandwich.

You might be a little confused by the sprinkle of salt inside, which lends a bit of savory dignity. The unsweetened cream cheese and Nutella play well together, too, with restraint; this isn't a too-sugary dessert. Even so, don't be fooled. This is all dessert, all the way.

A bowl of berries rounds it out. Place two golden halves of one of these sandwiches on your guest's plate, surrounded by sliced strawberries and there won't be a doubt in their mind: this is a dessert to end a meal magnificently, with a nod to childhood comfort and the indulgence of a grown-up dessert.

But if, after all my persuasion, you decide to ignore my warnings and take this decidedly dessert-ish sandwich off road on a trip to breakfast or midnight snack, who am I to stop you?

Hot Baked Nutella & Cream Cheese Sandwich

serves 4

8 slices soft yet crusty Italian bread
4 ounces cream cheese, cut into 4 cubes and softened
4 to 6 tablespoons Nutella
Flaky salt
Melted chocolate, to garnish
Fresh berries, to serve

Heat the oven to 450F. Line a baking sheet with parchment or a Silpat. When the oven is hot, lay each slice of bread on the baking sheet and put in the oven. Turn the oven to BROIL and toast the bread for 2 to 3 minutes or until golden brown. Remove from the oven.

Spread a softened cube of cream cheese on the toasted side of four slices of bread, one cube to each. On the other slices, spread a thick layer of Nutella. Sprinkle each slice very lightly with salt.

Put the sandwiches together and put back in the oven. Broil for 1 1/2 to 2 minutes on each side. Remove when both sides of the sandwich are toasted golden brown.

Cut each sandwich in half and drizzle with melted chocolate. Place on plates and surround with fresh berries. Serve immediately.

Recipe: Loaded Baked Potato Dip with Homemade Chips Recipes from The Kitchn

Yep, football season is upon us, and I'm busy dreaming up new appetizers, dips, chilis, and stews to carry me all the way through the fall. If you're like me, you have a few go-to appetizers that are simple to throw together and guaranteed to please. Yet I am still always in search of the new best recipe, and holy smokes, I think I just found it!

2012_08_20-BakedPotatoDip-2.jpgThis "loaded baked potato" dip uses just about every Southern staple I could squeeze in there: mayonnaise, cream cheese, cheddar, bacon, and ranch. While it's not the type of dip you want to serve at your next garden party, I promise it will be devoured at any football viewing party with hungry men (or me) nearby.

I originally tested this recipe with homemade potato skins, but they were a bit flimsy for the super thick dip. Oven-baked potato chips turned out to be a delicious choice, having enough strength to hold up while still providing a perfect base for loaded baked potato flavor. Don't worry though, if you are short on time, store bought potato chips are plenty good. Original Lay's were too weak for the dip, but both Pringles "Ultimate" Ridges and Lay's Thick Cut Sea Salted worked great.

I just cannot emphasize enough how addicting this dip is, and how excited I am to have another go-to in my tailgate repertoire. I'm still searching for a cozy fall cocktail and the ultimate game day dessert, but I'll be sure to keep you in the know. Now why can't September 1st just hurry it on up? Kickoff can't get here soon enough!

Loaded Baked Potato Dip with Homemade Chips

Yields 2 cups dip and chips for 4 to 6

For the chips:
1 pound small white or gold potatoes
2 tablespoons canola oil
1 teaspoon kosher salt
Freshly ground black pepper, to taste

For the dip:
8 ounces (1 cup) sour cream (light is fine)
4 ounces cream cheese, at room temperature
8 ounces (about 2 cups) grated sharp cheddar cheese
8 slices bacon, cooked and crumbled
1/4 cup snipped chives, plus additional for garnish
1 tablespoon powdered ranch seasoning mix
1/4 teaspoon Worcestershire sauce

For the chips, preheat oven to 450F, and prepare a large bowl of iced water. Slice the potatoes 1/4" thick. Submerge the slices in the cold water and soak for 30 minutes. Drain, rinse, and thoroughly pat dry. Toss the potatoes with canola oil, salt, and pepper and arrange in single layers on two parchment-lined baking sheets. Bake for 10 minutes, flip potatoes. Cook for another 10 minutes and flip again. Continue baking until chips are very crisp and light golden brown, approximately 8 minutes, watching carefully to make sure they don't burn.

(The chips can be baked up to 2 hours in advance and set aside at room temperature. Reheat at 425F just before serving. If serving a crowd, double this recipe, cooking in two separate batches.)

For the dip, combine the sour cream, cream cheese, and cheddar and stir until thoroughly mixed. Fold in the bacon, chives, ranch dressing, and Worcestershire sauce. Chill for a minimum of two hours or overnight. Bring to room temperature before serving. Serve with homemade chips or the thickest-cut store bought potato chips you can find.

Flatbread Recipe: Norwegian Potato Lefse Recipes from The Kitchn

2012-08-13-Lefse-4.jpgSome food lovers collect spices, others collect vintage cake stands. I collect recipes for flatbreads. I love them. Can't get enough. Lefse, in particular, is a flatbread I've been eyeing for some time now. You might even say it's my birthright.

2012-08-13-Lefse-5.jpgI grew up in Minnesota with my Christensen relatives and Lutsens, Knudsens, and Olsens for neighbors: all of us descended from Scandinavian settlers to the area. And though I heard plenty of stories about lefse, lutefisk, and all the other traditional foods of my forebears, by the time I came on the scene, we were more likely to have mac and cheese on our table.

But my interest in my culinary heritage has been growing over the past few years, helped along in no small part by a growing global interest in Nordic cuisine. Every church and community cookbook I've inherited has scores of these "Old World" recipes, and without fail, several of them are for lefse.

2012-08-13-Lefse-3.jpgLefse is a humble sort of flatbread, made as it is from leftover mashed potatoes. Work in a little flour, roll it out flat, and cook it on the stovetop for dinner! This makes a thin and soft flatbread that's more substantial than a crpe but more delicate and chewy than a flour tortilla.

The most quintessential way to eat lefse is to spread it with sweet butter, sprinkle with cinnamon and sugar, and then roll it up. This is makes an afternoon snack of surpassing quality. You can also spread them with jam and peanut butter, cream cheese, or nutella, or you can go the savory route and wrap up a few slices of deli meat with cheese.

Norwegian Potato Lefse

Makes 16 small flatbreads or 8 large flatbreads

You can substitute two cups of leftover mashed potatoes for the mashed potatoes in this recipe.

1 pound starchy or all-purpose potatoes
1/4 cup unsalted butter, room temperature
1/4 cup heavy cream
1/2 teaspoon of salt, plus more to taste
1 - 1 1/2 cups all-purpose flour
For serving: butter, cinnamon-sugar, jam, peanut butter, cream cheese, cold cuts, cheese slices, gravlax, or any other topping your inner Norwegian desires

Peel the potatoes and cut them into large, uniformly-shaped chunks. Place in a small saucepan and cover with cold water. Over medium-high heat, bring the water and the potatoes to a gentle boil. Cook until the potatoes are very soft and easily pierced with a fork, 10-12 minutes from the start of the boil. Drain the potatoes and transfer to a mixing bowl.

Using a potato masher, potato ricer, or a dinner fork, mash the potatoes as thoroughly as possible; you don't want any lumps. Cut the butter into small chunks and mix it with the potatoes. Add the cream and salt. Keep mixing until the butter and cream are completely absorbed. Taste and add more salt if desired.

Transfer the potatoes to a storage container and refrigerate overnight or up to three days.

When ready to make the lefse, clear a large workspace for dividing and rolling out the flatbreads. Lefse are traditionally made with grooved wooden rolling pins, but a standard rolling pin will do the job just fine. A pastry scraper or sturdy spatula for lifting and transferring the rolled-out flatbreads is also handy.

Mix the mashed potatoes with 1 cup of the flour. At first this will be very crumbly and floury, but the mixture will gradually start coming together. Turn the dough out on the counter and knead once or twice to bring it together into a smooth ball. Roll it into a thick log and then divide it into 16 equal portions for small 6-8" lefse or 8 equal portions for large 10-12" lefse.

Roll each portion of dough between your palms to form a small ball. Cover all the balls with a clean dishtowel off to one side of your workspace.

Set a cast iron skillet or flat grill pan over medium-high heat. When a bead of water sizzles when flicked on the pan, it's ready.

Dust your workspace and rolling pin lightly with flour. Roll one of the rounds of dough in the flour and then press it into a thick disk with the heel of your hand. Working from the center out, roll the dough into as thin a circle as you can manage. Lift, move, and flip the dough frequently as you work to make sure it's not sticking. Use more flour as needed.

Roll the lefse gently onto the rolling pin, as if you were transferring pie dough, and lay it in the skillet. Cook for 1-2 minutes on each side until speckled with golden-brown spots. Transfer the cooked lefse to a plate and cover with another clean dish towel.

While one lefse is cooking, roll out the next one. Keep all the cooked lefse under the towel to keep them warm and prevent them from drying out. If the lefse start to stick to the pan, melt a small pat of butter in the pan and wipe it away with a paper towel to leave only a very thin coating of fat on the pan.

Spread the lefse with your topping of choice and roll it up to eat. Leftover lefse can stacked with wax paper between the layers to prevent sticking and kept refrigerated for up to a week or frozen for three months. They can be eaten cold from the fridge or warmed for a few seconds in the microwave.
