Peppermint Cream Squares, White Chicken Chili, Cocoa Fritters, Gingerbread Cake Cookies, Toffee-Chocolate Chip Shortbread, Classic Rugelach, and More New Recipes from The Kitchn

We were all about the holiday cookies this week at The Kitchn! We have these festive peppermint cream squares, pink and bright. There were soft gingerbread cake cookies sprinkled with sugar, and vegan, gluten-free coconut snowballs. There were cocoa fritters and rugelach, as well as the most scrumptious toffee-chocolate chip shortbread.

But we didn't neglect dinner. White chicken chil is here for all your winter comfort food needs! Follow it with a rye and ginger hot toddy and you'll be warm, cozy, and well-fed.

Winter Recipe: Gingerbread Cake Cookies Recipes From The Kitchn

Gingerbread Cake CookiesLike many great cookie recipes, this one was born by accident. One year while I was making gingerbread men, some careless dough-rolling birthed a man who baked up chubby, thick and cakey, not flat and crisp like his brothers. Surprisingly, this textural mutation of a gingerbread man turned out to be the best one of all. You can call it cookie evolution, the accident that led to the creation of these chewy, molasses-spiked cookies. With their warm, spiced flavor and cake-like softness punctuated by the coarse crunch of sparkly sugar, you might also call them a new holiday tradition.

Gingerbread Cake Cookies

The dough is a basic gingerbread cookie dough, spiced with a good amount of black pepper. Once made, it needs to firm up in the refrigerator for several hours, but it can also be made up to two days before baking. For maximum cakey thickness, the dough is formed into balls before being dipped in coarse sugar, which adds a pretty sparkle and compelling crunch to the finished cookies.

Although it might be tempting to substitute more butter for the vegetable shortening, the resulting cookies won't have the same puffy softness. Instead, the all-butter version of this recipe sinks down into a flatter, crinkly cookie still good, but in my opinion, not as much of a stand-out as the version with shortening.

It's been years since my accidental discovery of these thick, cake-like cookies and they've made an appearance in my holiday cookie spread many times. Without fail, whenever they do, someone always approaches me to say, "That one, that gingerbread cake one..." in a tone of voice that says they could have eaten two dozen more. Accident, evolution, gingerbread cookie revelation whatever you want to call it, this recipe has become a holiday classic for me.

Gingerbread Cake Cookies

Gingerbread Cake Cookies

Makes about 4 dozen cookies

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 tablespoons (1 stick) unsalted butter, at room temperature
1/4 cup vegetable shortening, at room temperature
1/2 cup packed light brown sugar
2/3 cup unsulfured molasses
1 large egg
Turbinado sugar or other coarse sugar

In a medium bowl whisk together the flour, baking soda, cinnamon, ginger, allspice, cloves, salt, and black pepper, and set aside.

Using a stand mixer or handheld electric mixer, cream the butter and shortening until smooth and well-combined. Add the brown sugar and beat until fluffy and pale, about 2 minutes. Beat in the molasses and egg. With a spoon, gradually mix in the flour mixture. Divide dough in half and wrap each half in plastic wrap. Refrigerate until firm, about 3 hours, or up to 2 days.

Preheat oven to 325F. Pour a little of the coarse sugar into a small, shallow bowl. Break off a small piece of dough and form into a ball about 3/4 inches in diameter, or scoop out dough with a small ice cream scoop. Dip the top in the sugar and place on a parchment-lined baking sheet. Repeat with remaining dough, spacing cookies about 1 inch apart. Bake for 10-12 minutes, or until edges of cookies are firm and look dry, rotating baking sheet halfway through baking.

Cool on the baking sheet for 2 minutes, then transfer to wire racks to cool completely. Store in an airtight container for up to 5 days.

Fall Recipe: Gluten-Free & Vegan Gingerbread Cake Recipes from The Kitchn

2012_11_15-gingerbread5.jpgWhat are the holidays without wheat, dairy, eggs, and refined sugar? Pretty dreary, I imagined until I came up with this moist, richly flavored gingerbread cake that I will be happily baking for months, if not years, to come.

2012_11_15-gingerbread3.jpgSince going on an elimination diet, I have been avoiding gluten, soy, dairy, and refined sugar. I'm also a vegetarian who's allergic to chocolate, bananas, and many nuts [insert pity party here]. So I figured holiday baking would be a bust this year, until I found encouragement from friends on similar diets, delved into the gluten-free blogs, and began playing with new-to-me ingredients. What began as a perceived nightmare soon became a fascinating challenge.

Gingerbread has always been one of my favorite autumn-winter treats, and I was determined to make a version I could eat. Using the Joy of Cooking's classic applesauce gingerbread recipe as a starting point, I experimented until I came up with a cake containing no gluten, milk, butter, eggs, refined sugar, soy products, xanthan, or guar gums. When my (allergy-free) partner proclaimed that it tasted "like real gingerbread," I felt confident that I could serve it to anyone, not just those of us on crazy diets.

Now let's talk about what the cake does contain: subtly sweet teff and millet flours, nutty flax seeds, creamy coconut oil, and molasses and coconut palm sugar (sugars not to be eaten in excess, but at least unrefined and low on the Glycemic Index). If you have a favorite GF flour blend, you might give it a try, but I really like the combination of teff flour, millet flour, and potato starch, which work well with the rich sweeteners and spices and keep the cake moist with a lovely crumb.

Serve the cake with dairy-free cream, a fruit compote (or fresh fruit, like the persimmons you see here), or a dusting of stevia, and you'll feel festive, not restricted.

Gluten-Free Vegan Gingerbread

Adapted from Joy of Cooking's Applesauce Gingerbread.

Makes one 8x8 cake.

2 tablespoons ground flax seeds
6 tablespoons warm water
5/6 cup (100 grams) millet flour
5/6 cup (100 grams) teff flour
1/3 cup (50 grams) potato starch (not flour)
1 teaspoon gluten-free baking powder
1 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
2/3 cup coconut palm sugar
1/2 cup unsulfured molasses
1/3 cup coconut oil
1 cup unsweetened applesauce

Preheat oven to 350F. Grease an 8x8-inch pan or line it with parchment paper.

In a small bowl, stir together the flax and warm water until the mixture is thick and creamy. Set aside for at least 10 minutes.

Sift the dry ingredients (except the coconut palm sugar) into a large mixing bowl.

In another mixing bowl, combine the coconut palm sugar, molasses, coconut oil, applesauce, and flax mixture; whisk until well blended. Add to the dry ingredients and stir to blend.

Pour the batter into the prepared pan. Bake until set in the middle and a tester comes out clean, about 35 minutes. Cool in pan on rack until cake is cool enough to handle, then turn out.
