A Visual Guide to Pasta (With Sauce Pairing Suggestions) CHOW

Did you know that there are more than 350 shapes of Italian pasta? We kid you not. You're likely to only find only a fraction of that number at your supermarket or specialty grocery store, but even that can be overwhelming. How does cavatelli differ from cappellini? Which sauce goes best with which pasta? Thankfully, CHOW has a visual guide to pasta to help you sort it all out.

CHOW's Guide to Pasta covers 50 different pasta shapes, and offers recommendations for the best sauce pairing. The general rule of thumb is that "delicate noodles are for delicate sauces while heartier noodles are for heartier sauces," but when you have such a variety of noodles to begin with, it still gets complicated. So this quick guide aims to offer a little bit of perspective: for example, the guide notes that Pastina is best used in soup, Trofie is meant to be accompanied by a pesto sauce, but Farfalle goes with pretty much anything.

Ounces to Cups: A Guide to Estimating Pasta Yield

2012_10_23-DryVsCookedPasta.jpgDry pasta is sold by weight, but that measurement doesn't tell you how much cooked pasta you'll actually end up with. Here's a handy guide to estimating how much dry pasta you'll need to make one serving of cooked.

All of these estimates are based on a 2-ounce serving of dry pasta. For long pasta shapes, the measurement is based on the circumference of the dry pasta bundle; short shapes can be measured in a measuring cup.

LONG SHAPES
Angel Hair: 2 1/8" circumference dry = 1 cup cooked
Fettuccine: 2 1/8" circumference dry = 1 cup cooked
Linguini: 2 1/8" circumference dry = 1 cup cooked
Spaghetti: 2 1/8" circumference dry = 1 cup cooked
SHORT SHAPES
Elbows: 1/2 cup dry = 1 1/8 cup cooked
Farfalle: 3/4 cup dry = 1 1/4 cup cooked
Medium Shells: 3/4 cup dry = 1 1/8 cup cooked
Orzo: 1/4 cup dry = 2/3 cup cooked
Penne: 2/3 cup dry = 1 1/4 cup cooked
Rigatoni: 3/4 cup dry = 1 1/4 cup cooked
Rotini: 1/2 cup dry = 1 cup cooked
Ziti: 2/3 cup dry = 1 1/4 cup cooked
