No Refrigerator? No Problem: 8 Ideas for Vegetarian Lunches From the Freezer

I recently returned to school full-time, which means that instead of keeping my lunch cool in the workplace refrigerator, I'm now toting it around with me until midday. I've turned to my freezer to help provide healthy, filling vegetarian lunches every day with frozen meals that thaw out in my bag over the course of the morning and are ready to heat and eat by the time lunch arrives.

Whether you're running all over campus or working in an office without access to a fridge, here are eight ideas for straight-from-the-freezer vegetarian meals to make lunchtime easier.

1. Calzones: Bake a big batch of vegetable calzones and freeze them individually for later. I've been using half whole wheat flour in the dough and stuffing the calzones with roasted eggplant, mushrooms, kale, tomato sauce and a little ricotta.

2. Soup: Portion your soup and freeze it in muffin tins, canning jars or plastic containers and warm it up at lunchtime.

3. Peanut Butter and Jelly Sandwich (Pockets): For a simple lunch on the go, make and freeze PB&J sandwiches in bulk, or try this recipe for extra-portable Whole Wheat Peanut Butter and Jelly Pockets.

4. Enchiladas: Make a pan of enchiladas you can even do it in the slow-cooker, as in this recipe for Slow-Cooker Black Bean Enchiladas and portion them into individual containers.

5. Vegetable Wraps: These Roasted Sweet Potato Wraps with Caramelized Onions and Pesto freeze well and can be made with any type of roasted vegetable.

6. Burritos: Making your own frozen burritos is simple, economical and totally customizable.

7. Vegetarian Meatballs: Meatballs made with vegetables, legumes and grains in place of the usual ground meat are a light yet filling lunch option.

8. Chili: Try freezing recipes like this Black Bean, Sweet Potato and Quinoa Chili in portions for a hearty fall lunch.

Choosing the Right Freezer Containers

2008_07_23-Zucchini1.jpgYour freezer can be a great tool for preserving foods and storing make-ahead meals, and one of the most important things you can do is pay attention to the containers you use. The right packaging will ensure that frozen foods retain their flavor, color, and texture without developing freezer burn or absorbing other flavors and odors.

When freezing foods, choose containers and packing materials that are durable, easily sealable, resistant to cracking at low temperatures, and moisture- and vapor-resistant. Foods that contain water expand when frozen, so make sure the containers are expandable or that you leave enough headspace to allow for expansion. The following are suitable for frozen foods:

Rigid containers: Use sealable, rigid glass or plastic containers designed for freezing. Two inexpensive options are Frigoverre glass storage containers and Ball stackable plastic freezer jars.

Mason jars: Use only wide-mouth glass jars; jars with necks can crack more easily as contents expand. To allow for food expansion, do not fill jars above the 1-inch line.

Plastic freezer bags: Use bags that are designated for freezing, such as zip-top bags or vacuum freezer bags. These are made of thicker material than regular plastic bags and are more resistant to moisture and oxygen.

Freezer paper: This heavyweight paper has a waxy coating on one side, which provides a moisture-vapor barrier. It is particularly useful for wrapping meat, fish, and poultry.

Plastic wrap: Use good quality, thick plastic wrap not the cheap stuff.

Aluminum foil: This is more moisture-resistant than plastic wrap, but be sure to use heavy duty aluminum foil.

Finally, no matter what containers you use, remember to label and date everything!

Every week, they prepare their own mixes of arugula, red oak leaf, boston bibb, romaine, and even chard - a massive production taking up all their kitchen counters. When it comes to keeping those greens fresh, they've developed an unusual technique.

They prepare their greens by cutting them into bite-sized pieces, washing them en masse, and shaking off the excess water in a salad spinner. Then they spread the greens out on clean bath towels to air dry for a few hours.

2010-09-13-SaladGreens3.jpgWhen they're ready to store the greens (or they need their counters back), our friends simply roll the towels up with the greens inside. The rolls are secured with rubber bands and stored in the bottom shelf of their fridge. Each night, they unroll just enough greens for their salads the next day and then bundle them up again.

The absorbent towels do a great job of keeping the greens moist but not damp so they stay fresh and crispy all week long. Our friends have been following this method for years now and swear by its effectiveness. Since they've also been eating salads every day for years, we trust their opinion!
