Wait! Don't Throw That Pumpkin Away (Even If It's Carved)

1101_rotten.jpgIf you painted your pumpkins this year (or decorated them in some other way that didn't break the rind), you can likely reuse them in a myriad of ways in the kitchen. But even a carved pumpkin that's rotting fast can be put to use in a way that will eventually return to your kitchen:

Compost it! Use it as compost to enrich the soil in a garden or planter. This can be done in a couple of ways: For those with a compost bin or pile, smash up ol' Jack and add him in - it will easily break down and contribute to a nutrient-filled compost for enriching your soil. Even without a compost system in place, you can simply bury a used jack-o-lantern and it will break down in the soil. Adding it to the garden will give life to wonderful new fruits and veggies to be enjoyed next year!

Smelly Garbage Disposal? Why to Avoid Grinding Up Onions

Funny thing happens when you have a lot of tedious projects to do. Suddenly you have to figure out, right-this-instant, why the garbage disposal smells&mdahs;as in, get out the flashlight and tongs and remove the rubber collar. And what I found actually surprised me.

Yes, you guessed correctly, I found pieces of onions. But not as you would expect. I found onion skins. They had glued themselves along the walls of the disposal, clinging to all sorts of unsavory items as they made their way down the chute. The skins had been too lightweight to grind up and who knows how long they had survived down there.

I managed to pull them out with tongs and a spoon and resolved to just toss my discarded onion bits in the trash bin from now on.

Healthy Holidays: On Being Okay With Throwing Out the Candy

2012_11_01-DomokunCandy.jpgI hate wasting food and I have a mean sweet tooth, so the annual flood of Halloween candy used to mean several weeks of munching on chocolate and fruit chews, until I had either eaten or given it all away. But recently I've started tossing out most of the junk food that comes my way and I couldn't feel better about it.

I don't have kids, so the candy that comes into my house is usually given by well-meaning friends or relatives who don't realize a giant bag of mini candy bars has all kinds of complicated feelings attached to it. They're so good! So full of nostalgic Halloween memories! One or two isn't so bad at the end of the day, until it's been a week and I realize I've eaten 14 mini candy bars instead of my usual zero.

For me, good eating habits are all about the habit, the pattern I click into on a daily basis. Having lots of candy around means cheap candy becomes my after-dinner habit, instead of fresh fruit, or a few dates and nuts. The easiest way to break this habit? Get rid of the candy. That means setting aside a few pieces of candy for myself and my husband, pawning off a little more on friends, and throwing the rest in the trash. I hate wasting food, but I don't feel a shred of guilt about throwing away what, quite honestly, barely qualifies as food. (A peek at the ingredient list usually brushes away any lingering doubts.)

5 Tips for Freezing Pasta

102212-pastanest.jpg Cooking pasta isn't rocket science, nor does it take a great deal of time. But sometimes even 5-10 minutes can seem like too much when you're on a tight schedule. So hopefully you have some frozen pasta on hand for a hearty meal. Here are a few tips to consider when freezing pasta:

Frozen pasta reheats quickly, and will ensure you have something warm and hearty in your belly before a pot of water would have ever boiled. Want to make some in your own kitchen? Here are a few tips!

1. Al Dente Is Your Friend: Cook your pasta ahead of time to al dente. When reheated, pasta that's cooked to a slightly softer texture turns out mushy. Firmer is better, although just make sure it's still edible before freezing. The microwave process will soften it, but not cook it through.

2. Flat, Flat, Flat! When it's time to reheat your pasta, make sure you lay it out flat in your container. Doesn't matter if the container is round or square, but as long at the pasta lies flat, the microwave will be able to get all the pieces at the same time. No ice in the middle and no overcooked edges!

3. Mound vs. Individual: You can either freeze your pasta in small zip top bags or freezable containers or you can try a baking sheet. Line a baking sheet with parchment, toss your noodles lightly with olive oil, and spread them out into a single layer. Store them in the freezer this way until they are frozen, then transfer to a large zip top bag. They can then be tossed into stir fry or skillet meals without any microwaving needed. Long noodles can be piled in small nests for easy freezing and storage.

4. Freeze Sauce To Go With: Freeze homemade sauce in small ice cube shapes to go along with your frozen pasta. It will melt quickly and not explode all over your microwave either. Double score!

5. Lunch On The Go? Frozen pasta is a great meal to take along to work. Just pop the container out of the freezer and into your lunch bag. By the time the noon hour rolls around, the pasta should be mostly thawed. Freeze sauces or bring a small pouch of add ins, like crumbled bacon or peas.

Cooking Long Pasta in a Short Pot: Is Breaking Noodles Bad Form?

102212-pastastickout.jpg There you sit with long noodles and only a short pot in which to boil them. Suddenly the age old conflict of breaking your noodles or not is upon you. Some say it's bad luck, some say it's bad form. Where do you stand?

Most Italians will tell you that breaking noodles is bad luck. Some folks are ok with the chaos that noodle breaking might create and snap away to make everything fit in so they can walk away from the stove. (Let's face it: the 5 minutes it takes for pasta to boil you can get several things accomplished! Plus, sometimes it's easier for pasta to be twirled up on a fork when it's shorter anyway, right?)

If you want to avoid breaking your pasta and want it all in a pot, try adding it in, waiting a few minutes once boiling and the rest of the noodle should be soft enough to fold down into your pot.

Muffin Tins: The Best Way to Freeze Single Servings of Soup

010611-soup.jpgWhen it comes to soup, it's rather difficult to make the exact amount for your family (unless you have a family of 6 to 8). There are always leftovers, and although soup is usually just as delicious the next day, after day four you're really ready to be done with it for a little while. Freezing is the logical long-term storage method, but is there an easier way than putting it in one giant plastic tub? You bet!

Since my husband and I are the only two in our household, when we soup it up, there are always leftovers. We immediately freeze half the recipe and then finish off whatever is still in the fridge. It seems less intimidating that way, and there's a small victory dance when the last bit of bread soaks up the end of the broth.

In the months to come we can revisit the soup we have frozen or take it to work for lunches, but thawing a giant tub or container of soup seems to take forever. What if you just need a single portion or two for a quick meal? There's no time to wait for five portions to thaw at once you're hungry now! Now, now, now!

So, here's how we freeze our soup for fast and easy lunches:

010611-soup1.jpgLadle your soup into each section of a muffin tin. Here's the catch. Don't worry about getting a perfect mixture of broth and all the other good stuff mixed in; go ahead and make separate sections. Fill some with just broth and fill others with just the chunky stuff (noodles, veggies, meatballs, beans and so forth).

Once frozen, you can pop them out of the tin by placing the tray in a sink filled with an inch of hot water. They should slip right out when coaxed gently with the push of a knife. They can be stored in a plastic bag in the freezer.

Then when you're headed to work, just grab a broth cube and a "good stuff" cube. When the two melt, you'll have the right amount of everything! This also works out well for those who like more stuff than broth and vice versa.

It's a simple trick that works out amazingly well and can allow you to have dinner or lunch in just minutes, and have it be customized to your personal tastes.

Quick Tip: Use Frozen Vegetables To Cool Your Soup

101712-veg.jpgWe've shown you how to quickly cool your soup to make it mouth-ready in an instant. Here is another way, one that actually adds an extra bit of nutrition to your meal!

Toss in a handful of frozen vegetables!

Frozen vegetables usually don't need to be cooked to be delicious and although they won't have time to soak in the full depth of your delicious broth, they will cool your soup the same way an ice cube would while adding a bit more bulk.

Look for thinner or softer vegetables such as peas, corn, cubed carrots or even mixed vegetables. Other favorites are frozen spinach.

It's not a crazy insane rocket science tip that will alter the way you cook forever, but it is a great reminder when you have a hungry family staring you down from the other side of the counter.

What Will Ruin a Pizza For You?

101212-fishpizzaED.jpgGrowing up I remember quite clearly going to my grandmother's house. For dinner she would often order pizza from the local joint and each time I would cross my fingers that it would be delicious. Every time that warm box arrived and the lid was opened, there they sat, staring back at me anchovies! A deal killer. What are you pizza turn-offs?

OK, so I could never see the eyes of those anchovies, but I knew, I just KNEW they were staring back at me somewhere. Although I like their taste now on other things, I'm still not a fan of them on pizza. Even though I'll eat a piece of pizza pie whenever, if there's fish on it, I'm out like trout.

Remove These 3 Road Blocks to Keep Your Kitchen Cleaner and Happier

1993120dishes.jpgThe kitchen is one of those rooms in your home that sees a great deal of use. It can spiral out of control in a jiffy, but its daily use isn't usually the thing that really holds it back from staying clean. Here are three common road blocks that, once removed, will help you stay in the groove and keep your kitchen clean and happy.

The easiest ways to identify these hangups is to take a look at your kitchen when it's at its worst. Yes it can be scary and you'll probably want to avert your eyes and run for cover, but when our kitchen seems like it can't hold one more dirty dish is the best time to see things for what they are.

Even though there will always be messes, remedying the following things can help your kitchen run at a much smoother pace.

1. Do You Have Cleaning Supplies Close By?
I really believe that all cleaning supplies should live in their respective rooms. Thinking you'll drag the counter spray cleaner back from the bathroom? A joke. Or rather, it won't be at hand right at the moment you need it. Also, make sure you have towels ready for any job, at all times. You may need to invest in more, but towels can be pot holders, trivets, cleaning tools and more!

Is Your Trash Can (or Recycling Center) Too Small?
For years my husband and I would have the trash can and then a bag on the floor next to the trash can with more things in it that just weren't going to fit. A 13-gallon can is the industry standard size, but many of us use smaller cans. And if you can't compost, the trash gets very full this time of year with heavy trimmings from squash, potatoes, and other fall vegetables. Clutter can easily gather on counters and in common areas, too, when your recycling bins are too small or too far away from the kitchen.

Do You Need an Extra (or Larger) Drying Rack?
It's easy for even clean kitchens to pile up. Do you put off washing dishes because the drying rack is still full? Do you have a spot to put dishes as you clean them?

How Much Time Do You Usually Have To Get Dinner on the Table?

093012-dinnertime.jpg Growing up my mother used to say that if dinner didn't come together in less than 30 minutes it wasn't happening. Lately I've been feeling like I have even less time, so I'm curious: how much time do you actually have to pull together a meal for your family?

What Are Your Top 5 Freezer Essentials?

CrowdedFreezer9282012.jpgA well-stocked freezer can spare a person a lot of late-night snack cravings or lazy days when you just don't feel like going to the store, and it's absolutely essential if you have friends who like to drop by for impromptu parties. (See our 8 staples for stress-free entertaining here, but be warned: the well-stocked freezer may cause this habit to develop in your friends.) But what constitutes "well-stocked" depends a lot on where we live, how we cook and entertain, and how big our freezers are. What are your essentials? Here are five of my own.

In a perfect world, I would have the following things in my freezer at all times:

Cocktail ice I love making fancy cocktails, and my favorite parties are cocktail parties. But a host always needs more ice than he or she thinks, so I like to keep on hand more ice than makes any rational kind of sense, just to be prepared. And of course I have to keep an ice ball or two around in case my father comes to dinner and wants one in his Scotch.

Frozen fruit Freezing summer fruit when it's in season is probably the only thing that gets me through the dark days of December, when the novelty of winter food has worn off and all I really want is a strawberry smoothie.

Homemade stock Homemade stock and broth makes such a difference in the way food tastes. I like to freeze mine in muffin tins (each muffin well holds 1/3 cup), then pop them out and store them in bags for later. And whenever we have meat, I like to store the bones in the freezer until there are enough to make a new batch of stock.

Ground pork My husband and I make a lot of Chinese food, and a lot of my favorite dishes, like dry-fried string beans, call for just a tablespoon or two of ground pork. Since I can't buy just a tablespoon of pork at a time, I like to freeze the rest in individual portions so it's all ready next time I need it.

Frozen snacks I am always happy knowing that there are single-serving pizzas or mini quiches or pork dumplings in my freezer, because it absolutely never fails that I will become suddenly ravenous at exactly the moment the very last delivery place closes, and that's not the time to start making a big meal. Frozen savory snacks are also good to have on hand when you have friends who like to drop by for cocktails. You have to have something to feed them, and this way you don't find yourself stuck in the kitchen making 12 grilled cheese sandwiches while there's an impromptu party going on.

The Best Way to Avoid Bitter Eggplant

2010-09-01-Eggplant.jpgSome recipes advocate salting eggplant before cooking. Others swear cutting out the inner core of seeds will do the trick. Among all the advice, both scientific and folkloric, we've really only come across one tip that works every single time.

Quite simply: buy eggplants as fresh as possible and use them right away.

The older an eggplant gets, meaning the more time that's passed since harvesting, the more bitter it becomes. This explains why the eggplants we buy at the farmer's market this time of year are always so delicious while the ones we buy at the grocery store end up with problems. Who knows how long ago those grocery store eggplants were picked!

Of course, if grocery store eggplants are your only option (because who doesn't crave a little eggplant parmesan in the middle of winter?) then it's time to try out those other remedies. We've had the most success salting the cut cubes of eggplant and letting them sit for a few minutes while we prep the rest of the recipe. Harold McGee in On Food and Cooking theorizes that salting doesn't actually change the eggplant's bitterness so much as it decreases our perception of it, but we'll take it if it works.

6 Ways To Tidy Your Pantry In 10 Minutes

092310-pantry.jpgSometimes we don't have time for a full cleanup and overhaul of our kitchen storage, but still, the smallest effort can make the largest difference, especially when it comes to your pantry. Here are six things to do tonight that will only take you 10 minutes. When you're done, you'll be amazed, impressed and left wondering why you didn't do them sooner!

1. Face All Your Labels Out: It's hard to be able to tell what you have if you can't see the labels. Face them all out, stacking like items on top of each other for extra visibility.

2. Group Similar Items and Flavors Together: In our pantry we have a soup section, an Asian section, a Latin America and so forth. It's an easy way to hop into your pantry and grab what you need for an entire meal without digging through assorted shelves looking for that last ingredient that seems to be hiding from you!

3. Wipe Down the Shelves: It seems like such a basic thought, but when was the last time you did it? Use a damp rag and wipe up the dust and debris that falls so easily in the pantry. There's usually a light coating of flour (even if that's not where you keep said flour) and other dust that falls from grains. A clean cabinet is a happy one!

4. Check Expiration Dates: Although most of your canned goods should all still be in date, open packages might not have the same luxury. Check anything with a clip, binder or tie for sure!

5. Make a Meal List: Post-it notes can be used outside of the home office. When straightening your goods, make a quick list of meals that can be made from the supplies in your pantry. That way when you come home half fried from work and take out is calling your name, all you have to do is open the door and surely there will be something that can be made in a jiff!

6. Re-Stack Dishware: If your pantry has your food and dishware sharing spaces, make sure the bowls have been wiped out from dust, the plates straightened and your cake plate put back in the right spot once and for all. It's amazing how fast Pyrex can get unruly!

Forget the Bread: 5 Other Foods You Can Use To Make a Sandwich

091912-wrapshot.jpg Is a sandwich still a sandwich if those yummy ingredients aren't bookended with sliced bread? We won't take time to debate the logistics, but we do know there are other options! Want to see what's on the list?

1. Tortillas: Yeah, this isn't a novel idea, but a list has to start somewhere, right? Get crazy and check out flavored wraps or even giant ones found at different ethnic markets!

2. Spring Roll Wrappers: These paper thin pieces are perfect for holding in more than spring rolls. Although peanut butter and jelly might not be super awesome, egg salad and a pickle would be delicious!

3. Lettuce/Kale: Before it was cool to forgo the bun, I've been wrapping anything that will sit still up in lettuce. Just remember to eat quick if you're adding something warm such as a burger or piece of crispy fish!

4. Pounded Chicken/Turkey: There really aren't enough dishes that involve the use of a meat mallet. Bust out your aggression and pound your poultry paper thin. Cook it up in a flash and use your protein to hold in all the other goods!

5. Pita/Lavash: Although both of these items are still technically bread, they aren't used in the conventional manner and we're going to count them in. They can be a great way to dress up a basic or traditional meal or serve up something new when entertaining.

Po'Boy to Pit Beef: What's Your Favorite Regional Sandwich?

2012_09_19-RegionalSandwich.jpgSome regional sandwiches hit the big time, like the New Orleans muffuletta or the Los Angeles-born French dip, while others are famous only to those who grew up eating them. From Kentucky's Hot Brown to Chicago's Italian beef sandwich, there are enough regional specialties around the country to keep a traveling sandwich eater well-fed and happy. What is your favorite regional sandwich?

Lonely Planet has a list of 20 great regional sandwiches that is a good place to start for those interested in expanding their meat-and-cheese horizons. Some are a little terrifying (yet intriguing!), like the Horseshoe from Springfield, Illinois, an open-faced sandwich made with two pieces of toasted bread and two hamburger patties piled high with cheese-sauce-smothered French fries.

Others are well-known favorites, like the lobster roll, the po'boy and the Cuban, which fans argue was either invented in Tampa or Key West or was it Cuba? If it ever comes up, just nod and keep eating; we've found that when it comes to great regional sandwiches, emotions run deep.

This is the food divide of one's childhood, the first step on the slippery slope to dessert without dinner, treats before bedtime, keys to the car at 16. Did you parents cut the crusts off your sandwiches? Or did you labor to eat every single one?

Set the Date Now: Holiday Party Planning

091012-calendar.jpg We're already halfway through September and you know what that means, right? In moments visions of sugar plums will be on our doorsteps and with a single deep breath the holidays will have come and gone. The holidays! Sarah, the kids just went back to school! True, but it's still time to save the date!

We all lead busy lives and our schedules fill up quick. Each year it seems that it happens sooner and sooner and we're left saying no to more and more things with time being so short. There's nothing wrong with that mind you, but if you're looking to entertain this year, you don't want to be the one chiming in at the last minute and having your offer declined.

In the next month or so, what about sending out pre-party invites that let people save the date for a big event. That doesn't mean you have to be throwing the party of the century, it just means you're thinking far enough in advance to help your friends schedule in what's important you!

Send them an email, snail mail or even something silly to hang on the refrigerator to help them remember the date you're claiming on the calendar. Check local school schedules for plays or holiday events and other big social city gatherings. And remember: we're not advising you plan your holiday party like a full-on wedding just that it never hurts to think ahead! Happy party planning!

Where Do You Buy Whole Grains?

091012-redmill.jpg Where do you find whole grains other than Whole Foods? Health food stores are a great option if there's one in your area, but we're curious, where do you shop for these new-but-old menu items for less than $8 per pound?!

Growing up my grandparents belonged to a food co-op where everything came in large bins and was self serve. This seems to be a thing of the past and lately I am having trouble tracking down my whole grains without paying an arm and a leg for them.

Often you can find deals at Indian, Asian, Mediterranean, or Latin American markets if you know what you're looking for or what it's called in another language. Health food markets are an option, but lately they don't seem to be quite as cheap as they once were.
