Recipe: Sausage & Sauerkraut Pizza Recipes from The Kitchn

01-06_10_2012-DSC_9118.jpgThere's a remarkable little pizza joint near my house. They have a big wood-fired oven crammed into a restaurant the size of a walk-in closet. There are three tables pushed against the wall, and a few seats at the bar, pressed up beside that blazing oven. Oh, and you enter through a convenience store, sidling past Diet Coke and bubblegum into this dimly-lit, miniature pizza parlor. But its size is in opposite proportion to its imagination and personality: this place turns out amazingly good pizza, including one that had me do a double-take, then fall promptly in love.

Maybe you have a place like this in your town? Pizza geeks firing up a big oven, and turning out pizzas without an ounce of pretension. Bono Pizza is the name of our spot, a cash-only, buy-your-soda-at-the-convenience-store kind of place.

The first time I went there I went with high expectations and I was not disappointed. They had the classics all under control: Margherita, Bianco, and other staples. But they also had some intriguing new combos, like the "Barry White" (only white ingredients like parm, mozz, onions, and more) and the Barcelona, a cheeseless pizza piled sky-high with vegetables.

But the one that immediately caught my eye was the Berliner. Tomato sauce, kielbasa, sauerkraut, fresh mozzarella. Bono's menu admits: "It sounds awful, but actually tastes good."

Indeed it did! We ordered it and that pizza came out of the oven ever so slightly charred, with a crisp crust and piquant sauce, slices of kielbasa with blackened edges and soft, sour sauerkraut. It was pretty incredible something about the way the tanginess of the sauce and fermented cabbage played off the richness of fresh mozzarella and sausage.

So here it is for you now a very simple pizza, really, but one that you may have to talk yourself into at first. Don't think too hard about it just dive in. If you have even the slightest fondness for sauerkraut (and even, perhaps, if you don't) I think you'll find this very good indeed.

Sausage & Sauerkraut Pizza

makes 2 pizzas

1/3 recipe (2 individual dough balls) of The Best Pizza Dough Ever, risen overnight in the refrigerator
1/2 cup tomato sauce, such as the one in this recipe
4 ounces fresh mozzarella, drained
1/4 pound smoked kielbasa, cut into thin rounds
2/3 cup sauerkraut, drained
Olive oil
Salt and freshly ground black pepper
Freshly grated Parmesan cheese

An hour beforehand, bring the pizza dough out of the fridge to warm and relax.

Heat the oven as hot as it will go, ideally at least 500F and put a pizza stone, pizza steel, or upside-down baking sheet in the oven.

Lay out two squares of parchment and stretch out the pizza dough, one on each parchment square. Divide the sauce between pizza dough, spreading it smooth with the back of a spoon.

Tear the mozzarella into small chunks and distribute it evenly over the pizzas, then top with the sliced kielbasa and the sauerkraut. Drizzle with olive oil and sprinkle lightly with salt and pepper.

Bake the pizzas one at a time, sliding the parchment carefully into the hot oven. Bake for 5 to 7 minutes, or until the crust is beginning to brown at the edges.

Remove and sprinkle lightly with shaved Parmesan. Let rest for 3 to 5 minutes before cutting.

My Favorite Pizza Topping: Garlicky Kale

Now that the weather has cooled off and it's possible for me to turn on the oven in my apartment without feeling like I'm detoxing in a sauna, I'm ready to get back to a favorite weekly ritual: Friday night pizza. Pizza is by far my favorite food, but I'm a surprisingly simple girl when it comes to how I make it. I don't do a lot of toppings, and I rarely stray from a few key ingredients. (You may say it's boring; I say it's consistent.) And the one main constant for me is kale. Super, super garlicky kale.

Like Emma, I too have an obsession with kale, and in my case, that obsession means it's the main ingredient on my pizza. I usually wash and tear up a full head of lacinato kale (enough to fill up a salad bowl), coat it with olive oil, press two cloves of garlic into it, massage it for a few minutes, and then season with salt and pepper.

It's not hard to make pizza dough as we've shown you this week, but I sometimes take an even easier route and buy Whole Foods' whole grain pizza dough. ($3.00 for a lump of dough, which makes two 12" pizzas. I'm a big fan.) After rolling out the pizza dough, I coat the pizza in a few spoonfuls of pesto, pizza sauce, or olive oil (depending what I have, and the mood I'm in) then load on the kale to practically overflowing. It always looks like a ridiculous amount of kale, but as you probably know, greens cook down so much in heat, so I pile it on knowing it'll reduce in size, brown, and get crispy. Then a light dusting of freshly grated parmesan cheese, or a few pieces of smoked mozzarella. It's a green pizza machine.

The result? A hearty, slightly bitter yet completely satisfying vegetarian pizza, particularly when matched with a salty cheese and lots of garlicky zing.

How Do I Keep No-Knead Pizza Dough From Sticking? Good Questions

2012_10_11-NoKneadPizzaGQ.jpgQ: I love the no-knead bread technique and use it all the time for artisan bread, but I'm having trouble translating it to pizza. Because the dough is so wet, it is very tricky to shape, even into something as rustic as a pizza. It sticks like the dickens to my hands or rolling pin, no matter how much flour I use.

I'd consider myself a reasonably experienced baker, so I'm puzzled that I can't get this right. I use the Artisan Bread in 5 Minutes a Day recipes, but from what I've seen of other no-knead recipes this question would apply to them as well. Any tips?

Recipe: Apple Cinnamon Mini Monkey Breads with Lemon Glaze Recipes from The Kitchn

Oh, monkey bread! How we love you little pull-apart nuggets of buttery, gooey cinnamon goodness. And I've been thinking about how easy monkey bread is when you've been making pizza! What? How are they related? Well, leftover pizza dough is a perfect base for monkey bread and other breakfast treats. And even if you haven't been making pizza lately, store-bought, ready-made pizza dough is also a way to get these into the oven (and into your mouth!) that much quicker.

These little monkey breads are designed for eating on the go a little more easily than the full-sized traditional monkey bread that needs to be picked apart piece by piece. They are baked in muffin cups, and they come out all gooey and crisp from the butter. They get a lovely lemony glaze, creamy and touched by honey.

And yet they're not too sweet. That's the beauty of using pizza dough here it's not too rich, and not sweet at all. So you have chunks of dough, yeasty and tender, encased and baked in a buttery, cinnamon glaze, and tumbled together with chopped apples, raisins, and (if you like!) dried cranberries.

All together these are a marvelous breakfast treat warm and sweet from the oven, and good for eating on the go, or at a leisurely breakfast with family.

And one last note: For anyone who has ever had the cobblestone at Panera Bread, that muffin-shaped monkey bread of cinnamon, raisins, and citrus glaze, these are really an attempt to get them at home. I like these much better they have all the right flavors, but they're not so teeth-achingly sweet.

Apple Cinnamon Mini Monkey Breads

Makes 12 mini monkey breads

1 1/2 pounds prepared pizza dough OR 1 batch dough (below)
8 tablespoons unsalted butter
2 teaspoons vanilla
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon salt
2/3 cup mixed dried fruit, such a mix of raisins, currants, and cranberries
2 small or 1 large apple, about 1/2 pound
1 lemon, zested
2/3 cup dark brown sugar
Flour, for dusting the dough

For the glaze:
1 tablespoon cream or milk
2 teaspoons honey
Juice of 1 lemon, about 3 tablespoons
3/4 to 1 cup powdered sugar

Lightly mist a large piece of parchment or baking sheet with baking spray. Lay the dough out on it and pat into a roughly 2-inch-thick rectangle. Use a knife or bench scraper to cut it into 4 roughly equal pieces. Cut each of these into 12 lumps, for a total of about 48 dough lumps about the size of your thumb. Sprinkle flour over top of the dough pieces, cover with towel, and set aside while you prepare the monkey bread filling.

Prepare a 12-cup muffin pan by lightly greasing the wells or lining with paper muffin cups.

To make the filling, melt the butter in a saucepan or the microwave. Stir in the vanilla, cinnamon, ginger, and salt and set aside to cool completely.

Roughly chop the dried fruit and place in a large bowl. Peel and core the apples, and grate them into the bowl with the dried fruit. Stir in the lemon zest as well as the brown sugar. Sprinkle the dough pieces again lightly with flour, to help keep them from sticking to each other, then toss them with the dried fruit, apples, and brown sugar. Pour the completely cooled melted butter into the bowl and stir to coat the pieces of dough.

Quickly scoop up handfuls of the dough and fruit mixture and place them in muffin cups (about 4 pieces to each cup). If there is any leftover butter in the bowl, pour this evenly over the monkey breads.

At this point the monkey breads can be covered lightly and refrigerated overnight. When ready to bake, take out of the fridge and let them rise for 1 hour before baking.

Set aside in a warm place to rise for 1 hour.

Heat the oven to 400F and bake for 20 to 25 minutes or until browned on top and the insides register about 190F on an instant read thermometer.

While they are baking, make the glaze. Warm the cream and honey in the microwave or in a small saucepan until the honey is dissolved. Whisk together with the lemon juice and powdered sugar until it forms a thick, creamy glaze.

Remove the monkey breads from the oven and drizzle the glaze over the tops. Serve warm.

Monkey Bread Dough

Makes 1 1/2 pounds of dough, enough for one batch of Monkey Bread

2 teaspoons instant yeast
3 1/2 cups all-purpose or bread flour
1 1/2 teaspoons salt
2 tablespoons olive or canola oil
1 1/4 cup cold or lukewarm water

Mix the yeast with the flour and salt in a large bowl. Slowly mix in the oil and water. Knead for 5 to 7 minutes by hand or with the dough hook of a stand mixer, until the dough is smooth, stretchy, and pliable. Proceed with Monkey Bread recipe (above).

How To Freeze Pizza Dough Cooking Lessons from The Kitchn

How To Freeze Pizza Dough

What You Need

Ingredients
1 batch pizza dough
Spray oil or olive oil

Equipment
Plastic freezer bags

Instructions

1. Form the dough into individual balls, the size you would use to make one pizza.

2. Lightly spray each dough ball with spray oil, or wipe with olive oil.

3. Turn the dough over so it is lightly coated in the oil.

4. Slide the dough ball into a freezer bag and seal, squeezing out all the air.

5. Place in the freezer and freeze for up to 3 months.

6. When ready to use, put in the fridge overnight or for about 12 hours.

7. Before making the pizza, bring the dough out on the countertop and let warm up and rest for about 30 minutes before stretching out the pizza.

Weeknight Dinner Recipe: Prosciutto and Arugula Pizza Recipes From The Kitchn

With all the chopping and precooking some toppings require, it often seems easier to pick up the phone and order delivery, especially at the end of a tiring day. Instead, give this weeknight-friendly pizza recipe a try. Topped with a layer of chewy, crisp-edged prosciutto and finished with a couple big handfuls of fresh, peppery arugula, it comes together in a flash, no chopping or precooking necessary.

The combination of fatty, salty prosciutto and spicy arugula is a classic, which is why I've been making this particular pizza for years. I used to tear up the prosciutto and randomly scatter it over the dough before baking, but I've since discovered that paving the surface of the pizza with an even layer of pork is the way to go. Laid out this way, every bite includes some prosciutto, a little chewy and crispy at the edges after baking.

Hot out of the oven, the pizza is scattered with a generous amount of arugula, which softens a little at the edges but doesn't wilt, lending a spicy bite that cuts through the salty porkiness of the prosciutto.

And on busy nights, I appreciate that the only ingredient prep this recipe requires is opening a couple packages which sounds very Sandra Lee, but this pizza doesn't taste packaged. Even on weekends when I have a little more time and am making several pizzas for a group of friends, a prosciutto and arugula pie will invariably make its way onto the menu. It's quick, it's easy and everyone always always loves it: isn't that the very definition of pizza?

Prosciutto and Arugula Pizza

Makes one 10-12" pizza

1 ball pizza dough, store-bought or homemade (see Additional Notes)
1 tablespoon olive oil
2 tablespoons tomato sauce, store-bought or homemade
3/4 cup grated mozzarella cheese
4 slices prosciutto
A couple handfuls arugula

If you have a pizza stone, place it on a rack in the middle of the oven. Preheat the oven to 550F (or maximum oven temperature) for at least 30 minutes.

If transferring the pizza to a stone in the oven, assemble on a well-floured peel or cutting board. Otherwise assemble on the surface you will be cooking on (parchment paper, baking sheet, etc.). Roll or stretch the dough into a circle. Brush the edges of the dough with olive oil. Spread the tomato sauce over the rest of the dough. Sprinkle with about half the cheese. Lay the prosciutto slices so they are evenly covering the dough and sprinkle with the remaining cheese.

Bake the pizza until edges are lightly browned and cheese is bubbly and browned in spots, about 6 minutes at 550F. Remove from oven and scatter arugula over the top.

Additional Notes
My favorite quick dough recipe is Mark Bittman's basic pizza dough recipe, which rises in an hour or two, or in 6-8 hours in the refrigerator. One batch makes two pizzas; the other half of the dough can be refrigerated or frozen for later.

Recipe: Yeast-Free Pizza Dough Recipes from The Kitchn

I'm talking full-on, debilitating allergic, which totally sucks, because before she developed the allergy she really, really liked bread. And being a huge space cadet, I am always shoving a new yeast-laden recipe I developed into her face (yes, even Irish car bomb cupcakes are guilty, too), which she always so gracefully declines, while I stand there wanting to smack myself for forgetting for the umpteeth time.

2012_10_08-yeastfreedough-2.jpgSo you can imagine my surprise while dining together one nightjust the two of usas I watched her willingly take a bite of a pizza the chef sent to us. I admit, the pizza was a thing of beauty: a wood-fired sourdough crust piled with ripe figs, blue cheese, prosciutto, arugula, and a balsamic vinegar glaze. She turned to me and said, "it's too perfect not to try. It's worth every ounce of sickness that comes my way."

I felt honored to share that moment with her, if only because I knew it was not only rare, but maybe the only time she willingly ate something with yeast; something strictly for pleasure knowing later it would only cause her pain. That, my friends, is for the love of food. A love we both share deeply.

Needless to say, developing a yeast-free pizza dough has been on my to-do list ever since that very night. After whipping up this beyond easy recipe, now I am only wondering what took me so long. Gone are the days of "pizza waffles" and "pizza tortillas"; she can finally enjoy the same pizzas as the rest of us. Even if you aren't allergic to yeast, give this recipe a try. It's great if you're crunched for time, or just plain terrified of yeast. I'm not going to swear up and down that it's just as good as delivery, but it's pretty darn close. This one's for you, Tina!

Yeast-free Pizza Dough

Makes 1 large pizza or 2 individual pizzas

2 cups self-rising flour (I prefer White Lily)
1 tablespoon cornstarch
1 teaspoon kosher salt
3/4 teaspoon garlic powder
1/2 cup water plus additional as needed
2 tablespoons olive oil
1 teaspoon honey

Place a pizza stone in the oven and preheat to 500F.

In a large mixing bowl whisk self-rising flour, cornstarch, salt, and garlic powder together until mixed. In a separate bowl, combine water, olive oil, and honey. Add the liquid ingredients to the dry ingredients and stir until a cohesive ball forms, adding more water a tablespoon at a time if necessary. (The dough should be moist and firm but not sticky.)

Form the dough into a rounded disk and wrap with plastic wrap. Refrigerate for 15-30 minutes. On a lightly floured surface, roll out the dough with a rolling pin to form a perfect circle. Transfer the dough to the hot pizza stone and cook in the oven for 2 minutes.

Remove the dough from the oven. Top with tomato sauce, shredded mozzarella, and additional toppings as desired. Cook until the cheese is melted and the crust is very crisp, another 7-10 minutes. (For the pizza shown, I added the arugula and prosciutto after it came out of the oven.) Cool for 3-5 minutes before serving.

Whoa! Pizza Dough with Just 2 Ingredients Kidspot Kitchen

091012-pizzadough.jpgI have a beloved pizza dough recipe that I've been using for the better part of the last decade. I've tried many others, but we all have our favorites. This new-to-me recipe however, is a must-try, since it feels like cheating. It only has two ingredients. Yup, just two. Care to guess what they are?

Kidspot Kitchen is an Australian blog that came to our attention this week with their posting of two ingredient pizza dough. Now, pizza dough doesn't really have that many ingredients to begin with, but there is some wait time involved and you have to deal with yeast (which scares some). Although it's fairly simple, there is some worry and time involved.

This recipe calls for just two ingredients: self-rising flour and Greek yogurt. Sound crazy? We think so too, but others are singing its praise around the internet. It might not be the best pizza crust you've ever had, but that doesn't mean it's not tasty or super easy for kids to help you make.
