The Best Way to Avoid Bitter Eggplant

2010-09-01-Eggplant.jpgSome recipes advocate salting eggplant before cooking. Others swear cutting out the inner core of seeds will do the trick. Among all the advice, both scientific and folkloric, we've really only come across one tip that works every single time.

Quite simply: buy eggplants as fresh as possible and use them right away.

The older an eggplant gets, meaning the more time that's passed since harvesting, the more bitter it becomes. This explains why the eggplants we buy at the farmer's market this time of year are always so delicious while the ones we buy at the grocery store end up with problems. Who knows how long ago those grocery store eggplants were picked!

Of course, if grocery store eggplants are your only option (because who doesn't crave a little eggplant parmesan in the middle of winter?) then it's time to try out those other remedies. We've had the most success salting the cut cubes of eggplant and letting them sit for a few minutes while we prep the rest of the recipe. Harold McGee in On Food and Cooking theorizes that salting doesn't actually change the eggplant's bitterness so much as it decreases our perception of it, but we'll take it if it works.

Easy Kitchen Craft: A DIY Recipe Box Made From a Fruit Carton! Design*Sponge

You know those square fruit containers you get from the farmer's market or grocery store? If you have a spare one sitting around, you may want to check out this clever, budget-friendly DIY project: turn it into a recipe card holder!

This project was originally posted on Design*Sponge back in 2010, and the initial idea was to create a postcard calendar journal out of the cartons. But seeing all those cards lined up in there made me immediately think of a recipe box, if not for yourself, then perhaps one as a gift. Fill it with favorite or family recipes, wrap it with twine, and give it away! Done right it could be a very sweet, yet thrifty.

DIY Nut Milks: 5 Easy Recipes

2012_08_21-nutmilkWhile at the grocery store recently, I picked up a box of almond milk thinking that I hadn't tried it in cereal in quite some time and that it'd be nice to have around the house. I turned the box over to check out the sugar content and discovered a whole array of other ingredients and preservatives that I never realized were in most store-bought nut milks. It was time to make my own.

Once you make homemade nut milks at home, you'll likely stop buying them at the store. They really are so, so simple and it's nice knowing exactly what's in them and being able to completely control the amount of sweetness on your own. That's the upside.

The downside is you do have to soak the nuts for at least 6 hours and preferably overnight, so plan ahead. And because there aren't preservatives to keep it shelf-stable and fresh, it's really only good for 2 to 3 days in the refrigerator. This hasn't been a problem in our house; we've been using it in cereal and adding it to coffee in the morning.

A Few Tips When Making Homemade Nut Milks

1. Sweetening: I actually tend to like my nut milks not too sweet, but adding 1 to 2 tablespoons of honey or agave is nice as is 1 teaspoon of vanilla extract. A lot of folks blend in 1 to 2 sweet Medjool dates for natural sweetness.
2. Straining: For many nut milk recipes, you'll see the need for a "nut bag." This is essentially a bag made of a substance much like a super fine weave cheesecloth. You don't need this! I promise. Use a good-quality cheesecloth draped over a colander and you're good to go.
3. Leftover Pulp: After making your homemade nut milk, you're going to be left with a few cups of perfectly good pulp. Some recipes instruct you to toss it. I can never stand to do so, so I dry mine out on the lowest setting of my oven (170F in my case) with the oven door cracked ajar. This takes 6 to 7 hours and is obviously not ideal in the hotter summer months, but it results in really delicious almond meal that you can use in cookies, breads, and muffins. If you'd rather, it makes pretty great compost for the garden instead.

7 Ways to Get Your Cooking Mojo Back Cooking for One

It's easy to get into a cooking rut when you cook mainly for yourself. Of course it's also easy to get into one when you cook for your family or roommates, but it's far more likely for things to get shaken up in a larger household. Someone will take a trip and discover a new cuisine, for example, or develop an allergy or aversion, or come home with a recipe after a night at a new restaurant. But when you're single, it's all on you to keep it new and fresh in the kitchen, and that can be a challenge. Read on for seven ways to introduce new ways of cooking and thinking about food. (And yes, these tips will work for non-single households as well!)

Here are a few things that I do to keep it fresh and recapture my mojo in a solo kitchen:

1. Pick up something new.
Perhaps not every week, but several times a month I purchase an item that I'm not familiar with at the grocery store. This can be a spice, a kind of fish, or a new grain. Once home, the amazing internets provide cooking information and suddenly I'm at the stove and in the thrill of uncharted territory.

2. Try something you hate.
Sometimes we carry the notion that we dislike a food from an unhappy incident in the past. But if we give it a try today, we might discover that we've outgrown the dislike and are pleasantly rewarded with a new, delicious food to love.

3. Go to the library.
Cookbooks are expensive and they take up a lot of shelf space so we often don't experiment when it comes unfamiliar cuisines. The library is a perfect place to explore and discover recipes and cuisines that are new to you. If you find that you are using several recipes from a book or that you've renewed the cookbook twice and cannot bear to return it, then perhaps you can invest in your own copy.

4. Have people over to dinner. Often.
Cooking for others always broadens our horizons, requiring us to stretch beyond our comfort zone. If you've shied away from inviting your friend with an allergy to dinner because you didn't know how to cook for her, then read up on what's needed and enjoy the challenge of providing a meal utterly free of that ingredient.

5. Join (or start) a cooking club.
This can be organized in several ways but the basic premise is that people gather around once a month to share food, recipes, ingredients.

6. Take a cooking class or, if you're a crackerjack cook, offer to teach one.
There are many places besides fancy cooking schools to teach and learn these days. Try community centers, farmers markets, shelters, churches. Teaching or learning, either way your life will be richer.

7. Travel.
There's nothing like traveling to bring new tastes into our lives. If you cannot afford to go away, then visit the closest big city and explore all the ethnic neighborhoods. Or if you live in a city, try visiting a new neighborhood every weekend, with the ambition to try several new-to-you dishes. Most importantly, visit a grocery store and apply suggestion 1 (above).

Smart Tip: Skip the Express Lane & Go For the Shortest Line at the Supermarket

2012_08_20-GroceryStore.jpgPicking the right checkout line at the grocery store is always gamble, but one thing is certain: if you have a small number of items, the express checkout line is the best choice, right? Well, maybe not. When you do the math, it turns out the shortest line might be the fastest, even if the shoppers ahead of you have full carts.

Math teacher Dan Meyer set out to figure out the answer to the question we face every time we go grocery shopping: All other things being equal, which is the fastest, the line with more people buying fewer items, or the shorter line of people buying a larger number of items? While his answer is a little complicated for us non-math people, the most interesting finding backed up by the manager at his local supermarket is that the express lane isn't necessarily the faster choice.

It turns out every additional person in line adds an extra 48 seconds to the length of time you'll be in line, while every additional item only adds 2.8 seconds. To put it another way: "you'd rather add 17 more items to the line than one extra person!"

I'll be giving this technique a try, and if it doesn't work out, at least I can curse Dan Meyer instead of my own bad judgement when it comes to choosing lines.

Baking With Dates: Which Variety Reigns Supreme?

I'm in the process of developing a recipe for raw energy bars and have been experimenting with many different types of dates for flavor, texture and consistency. I found my very favorite for this particular recipe, but when I tried using them in other baking recipes, they fell short. I came to the quick conclusion that all dates are not, in fact, created equal.

In a well-stocked grocery store, gourmet food shop, or our cupboards as of late, you're likely to run across many different types of dates. While they're all wonderful to snack on, some are decidedly better than others for baking. Let's consider a few choices:

1. Medjool: These are the larger dates that you'll often see in plastic packages at the grocery store. They're incredibly soft and super sweet, wonderful for stuffing or using in shakes, smoothies or energy bars. I don't often reach for these first in baking recipes such as scones or quick breads simply because they're so moist and can be a little more difficult to cut uniformly. They can also be a touch more expensive than other varieties.

2. Deglet Noor: These dates are really easy to locate in most grocery stores these days. They boast a nice amber color and a chewier and much drier texture than Medjool dates, and keep a little longer. A great all-purpose date. We often have these in our cupboards to snack on.

3. Thoory: These dates are the opposite of Medjool dates: they're a very light brown and not at all sticky. In fact, they're much harder and have a distinctly nutty flavor. A great on-the-go snack, or wonderful in trail mixes, muesli, and granola because their low moisture content won't affect the freshness of the oats.

4. Halawi: Slightly smaller in size with a name that translates to "sweet" in Arabic, these have a really special caramel flavor that makes them popular paired with cheeses and savory fare.

The Winner? Deglet noor dates are my go-to date for baking. They're dry enough to chop and maintain their integrity in bread, cookie, or cake recipes while still maintaining that superstar, sweet date flavor. Plus, they're easy to find and often less expensive than other varieties.
