"Tis the season to be merry, with lots of reasons to crack open a bottle of bubbly. And why not pink?

This week's find, Ferrari Brut Ros NV, is a delicious sparkling ros from northern Italy perfect for any holiday gathering or celebration.

The wine has a lovely salmon pink color with glints of copper. Fresh, focused nose that shows a lovely combination of delicate red-berried fruit, subtle wild flowers and biscuity notes. On the palate, it is dry with a vibrant, creamy mousse and persistent pinprick bubbles. Exotic citrus notes on the palate add an extra liveliness. Good long length and a bright, refreshing finish that makes you want to take another sip.

At the table: Of the sparkling wine styles, ros is generally considered the easiest to place at the table (though I believe all sparkling wines have a rightful place at any table). Try this sparkling ros from Ferrari with a whole salmon baked in salt (to die for!), mushroom quiche or some chargrilled calamari. In fact it will go with so many fish, egg or mushroom dishes.

To start off, this Ferrari is not related to the automobile manufacturer! This Ferrari was established in 1902, by Giulio Ferrari, who after studying in France, decided to move back home and make the best possible Italian sparkling wines. Which is exactly what he did! Today Ferrari is the most famous producer of traditional method Italian sparkling wine. Trento DOC is an official DOC appellation in the Trentino-Alto Adige region of northern Italy. It is a DOC specifically and only for traditional method sparkling wines. It is not to be not be confused with DOC Trentino - which covers the same area but is for still wines. This Ros Brut NV is a blend of Pinot Noir and Chardonnay grapes. It was aged between 25 to 30 months on the lees before disgorgement and dosage. It is brut style with 7-8g/l dosage.
